Carotenes are what cause that Orange, Yellow and Red pigmentation in foods.
They are converted into the fat soluble Vitamin A once in the body. Highest concentration of carotene in fruit and veg are;
Carrots, Squash, Broccoli, Sweet potato, Spinach, apricots, cantaloupe, citrus fruits
Fun Fact Paprika, Cayenne, chili, parsley, cilantro, coriander are high in Carotenes as well.
TheycProvide many benefits to the body such as; *Promote macular health *Improved Cognitive Function
*Promotion of good skin health
*Development of Immune Functions in infants and toddlers *In non smokers they have a protective affect against lung cancer however in smokers if more than the UL of 15mg or 25000u is consumed it has been proven to increase your likelihood of Lungcancer
As stated before they are a precursor to the fat soluble Vitamin A so pairing these foods with healthy fats from oils, seeds or nuts will allow for better absorption.

I was really hesitant to share this second picture, moreso because I was just really embarrassed at how much I had left myself go. It was strange to me though because I’ve always eaten healthy and I’ve always remained active. I didn’t really get it, and then it dawned on me. I took this second picture over the summer. This past summer was hard for me. It’s been the hardest change I’ve ever had to undergo. I moved away from a place I absolutely loved. I moved away from the man I absolutely love. I struggled with some friendships while also struggling to maintain others. I was worried about finishing all these bucket list items while not necessarily enjoying my final moments with those people I cared about. I lived in 15 different hotels while in transit to my new duty station. I was constantly experiencing change and it was hard for me to maintain any level of stability. When I stepped on the scale in that second image I actually cried. I was stressed/depressed about every little thing in my life and I felt so much was out of my control. Not a lot felt normal anymore, including who I saw looking back in the mirror. I felt sorry for myself for all of 5 minutes when I realized that it was my problem to fix. A lot of you have asked what I’ve changed about my diet, and it really hasn’t been all that much. I’ve got a job with great opportunity in a location that’s awesome. I’ve gotten back into trail running the last 3 months which I did in college and it’s helped give me piece of mind. I’ve focused on doing the things that I wanna do and the things that make me happy. I’ve learned that while some relationships/friendships fall to the wayside, it’s important to embrace the ones that are still alive. It’s important to surround yourself with good people. It’s important to be happy. I just want to say, because you eat healthy and are active, doesn’t necessarily mean your mental health is up to par either. All are EQUALLY important on your body. The first pic and the left-handed side on the second pic are me happy— mentally and physically happy and healthy 💛
