I’ve gotten a lot of questions lately about nutrition & what to eat during the upcoming challenge. My most honest answer - Each person is different. I’m not a certified nutritionist but as a certified trainer I understand what feels good in my body and allows me to perform & what [email protected]= regret later. If I’m feeling uncomfortable after a meal I know that wasn’t the right food choice. Listen to your body bc it’s never shy in telling you somethings wrong. Eat what feels good & what you won’t feel like you need to “burn off” later. So here’s my quick breakdown of what I choose to eat & what I choose to avoid:
✅98% dairy free (that 2% is for the occasional goat cheese)
✅I avoid wheat breads, rice & pastas ✅I Don’t avoid the yolk🍳 ✅No red meat ✅I eat banana chips & PB for dessert almost every night (when I’m not having homemade popcorn instead) ✅Fruits & veggies dominate my meals ✅I avoid processed foods
✅I eat healthy fats all day long ✅I refuse to give up wine & my occasional margaritas 🍷🍹 ✅I eat 5-6 times a day ✅Chicken wings & holiday popcorn are my favorite “cheat” food

But apparently, millions of people have appointment with him everyday. So now I’m just standing in the line which doesn’t really seem to move 😔 Anyway, this is cold matcha latte I had yesterday from @tamarindojuicery It’s a very cute little juice cafe, the interior is great for pictures as well. And they serve many vegan options.

Lentil chickpea & egg bake 🍽🍅🍳⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
•1 can drained & rinsed chickpeas ⠀⠀⠀⠀⠀
•1 can drained & rinsed lentils ⠀⠀⠀⠀⠀⠀⠀⠀
•1/2 teaspoon garlic ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
•2 free range eggs 🍳 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
•1 can chopped & peeled tomatoes 🍅 ⠀⠀⠀⠀⠀
•Salt & pepper ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
•Chili flakes 🌶 (optional) ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
•Pre heat oven to 180 degrees celsius 🌡
•Mix the garlic into the can of tomatoes ⠀⠀⠀⠀⠀
•Add all ingredients except for the eggs together in a baking dish & bake for 30 - 40 minutes ⠀⠀⠀⠀⠀⠀
•Then add your 2 eggs and bake for about another 7-8 minutes ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Serve with squeeze of lemon juice 🍋 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
It’s amazing how well these cookies stay together even though there isn’t butter or flour in them. Thank goodness for peanut butter and GF oats✨ ⠀
Traveling today, so that means my #ketocoffee ☕️ is on the road with me. To make it mobile, I go for iced and opt for a straw. If you don’t have a glass or stainless steel straw with you, another great option is this little guy. It’s fully compostable. So it’s guilt free and bendable and doesn’t hurt my teeth like my stainless steel straws sometimes do with icey drinks! Here’s my recipe for iced keto coffee! - 1 tbsp MCT oil (skip the butter for iced and frozen coffee 🤢)
- cold brew
- heavy cream, amount to your preference - I use liquid stevia (again, preference)
- Dash of cinnamon
