Looking for a healthy fat packed and filling snack? Try meal prepping these Guac + Veggies in a jar!
Simply make a batch of guac, place a tbsp (or 2) into the bottom of a jar. Layer with celery sticks and close for grab-n-go snacking.

This snack was ten minutes “too early”. I had a snack an hour ago, too.
Because that’s what my body was telling me. I went to the doctor this morning and have gained 3lbs in this week alone. I’ve done nothing but study and complain all day.
And I’m still gonna choose to listen to my body.
I’m so miserable at the moment due to this cold. I’ve had it for a week and the doctor said it’ll probably be bad for the next five days or so, too. I’ve not exercised in a week because I’ve recognized that my body needs rest right now. I went to bed early when friends came over last night because my body needs rest right now. I’m eating appropriate sizes because I know my body needs nourishment right now. Yesterday I had a coffee with cream and a muffin after church even though I wasn’t particularly hungry because I was with a friend (yes, food can be social!) and it sounded good; I recognize that nothing drastic would happen to my body or life for having a mini muffin and some cream in my coffee.
My body is a machine at at the moment I am so frustrated with it. But I love it all the same because I’m. still. here. There is so much life to live, and I needn’t focus on my body beyond ITS needs and desires. Not MY desires.
Today my body desires curling up with my books assigned in class, eating two afternoon snacks, and plenty of water. And it just so happens to be that it needs those things, too. Sure, I desire to rebel against that weight gain. I want to restrict since I’m not active. I. I. I.
Let’s try and trust our bodies and the recovery process. Tell the Negativity Committee that meets inside your head to shut up and go home.

🌯 Spinach & Guac Wrap
⏲ Under 10 mins | Serves 1
This is probably going to be my favorite go-to lunch from now on...😍 I have already made it twice back to back now 😋 It’s so fast & tastes absolutely delicious! Think I need to start making two of these 😅 Have a wonderful day everyone! ✨
▫️1 Whole Wheat Wrap (@flatoutbread)
▫️Mozzarella Cheese (@kraft.naturalcheese)
▫️3-4 Cherry Tomatoes
▫️Handful of Spinach
In a pan, heat up the wrap with cheese sprinkled down the middle. Once the cheese has somewhat melted, transfer the wrap to a plate.
Mash your avocado & add some lemon juice & salt. Add it to the wrap. Slice your tomatoes & radish & add to the wrap as well as the diced onions. Add in your handful of spinach.
Wrap it up & slice in half!👌🏼

Steamed veggies can be just as good as roasted veggies. Especially with a generous squeeze of lemon and a sprinkle of sea salt and dipped in some dairy free @sietefoods queso. Can’t forget about the roasted chili potato wedges on the side with some homemade guac for dipping. So darn good and simple. .
🥦🥕🥒🍋 To make the veggies add to a pot of boiling water and boil for 3 minutes. Drain and add to ice bath to stop the cooking. Squeeze on fresh squeezed lemon juice, a drizzle of EVOO and a sprinkle of sea salt. Toss to coat. .
🍠🥔🌶 For the potatoes peel and slice potato of choice into wedges. Place on baking sheet and toss with olive oil. Season with sea salt and chili powder and toss to evenly coat. Bake on 400 for 15 minutes or desired crispiness. Serve with your favorite condiments and dips 😋
Ultimamente, parece que têm surgido muitos restaurantes mexicanos por Lisboa. No entanto, quantidade não é sinónimo de qualidade. O @coyotaco_pt foi uma boa surpresa 😊 Uma vez que provar a carta toda era impossível, optámos por três pratos com três proteínas diferentes para garantir o máximo de variedade possível nesta primeira visita. Começámos com o guacamole, delicioso e obrigatório (sou menina para dar lá um saltinho à tarde só para comer o guacamole, assim como quem vai tomar café). A seguir vieram os Tacos Al Pastor, de porco marinado, abacaxi braseado, cebola, queijo, coentros e chipotle. Bons (talvez a carne estivesse um bocadinho seca para mim), mas nada como os Tacos Tempura (pescada em tempura, aioli de jalapeño, repolho, pico de gallo, abacate e coentros) que se seguiram. Estes, ao contrário dos primeiros que são feitos com tortillas de milho sem glutén, são feitos com tortillas de trigo e foram o meu prato favorito da refeição. Por fim, uma quesadilla de frango. Queijo. Não é preciso dizer mais nada. Para terminar, pedimos os churros, que vêm com chocolate mexicano e dulce de leche e que estavam tão bons que ponderámos pedir mais uma dose. Ficou por experimentar muita coisa, nomeadamente os burritos, mas isso fica para a próxima visita que certamente acontecerá muito em breve. Ah! Se gostam de manga, têm de pedir o cocktail (sem álcool) Paleta-Rita ;) Já agora, o Obama gosta muito do Coyo Taco e se é bom para o Obama, é bom para mim.
