This one kinda just happened! And surprisingly, it worked a treat! Fried tofu with Thai Yellow Curry 😋 I had some tofu, thai green curry paste and veggies that needed using up. So with low expectations I combined it all. Happy it turned out so yummy! Takeaway: always have some curry paste and coconut milk handy, so if you’re ever out of meal ideas, just get all your veggies into that gorgeous sauce and it’ll taste spectacular! Oh and still not sure why it turned out yellow instead of green 😂

When you can’t make up your mind on what kind of pizza you want, make 4;
Fig, cambozola, prosciutto,a brush of rosemary olive oil on the dough and topped with arugula & balsamic glaze.
Green Curry Shrimp with green curry coconut sauce, red cabbage, crimson carrots, bean sprouts, scallions, red onion & peanuts.
Homemade harissa, shaved red potatoes, rainbow chard, gold tomatoes & feta.
Homemade red sauce, chorizo panino, hot capicola, smoked garlic, roasted artichoke hearts & burrata.
Neither of us could pick a favorite 🤷🏼♀️ The only one I knew I was making was the fig pizza, the other three were based on what I found in the kitchen and garden.

Dinner: rainbow veggie green curry with tofu and brown rice, plus lemon cucumber and red bell pepper salad.
For the curry I sautéed the veggies (onion, garlic, zucchini, red cabbage, green beans, leftover baked sweet potato) in a bit of oil and then added the new TJs green curry sauce. I baked the tofu in the oven until crispy and then combined with the veggies. The salad is dressed with seasoned rice vinegar and a touch of maple syrup.
