I was craving a sandwich BAD, and this more than did the trick. Made a rosemary and sea salt version of @holistically_thriving bagel recipe and layered in some avaocado, red bell pepper, cucumber, tomato, red onion, romaine, and cashew cream. It was even better than it looks 😋

I planned to put this muffin recipe up on the blog today in between my wedding edits—but our internet went out (again) 🤦🏼♀️
So after an hour and a half of messing with the router and trying to get it up and running again —I’m deciding to get up and start “running” (just moving 😉) myself!
Yesterday I realized I’ve spent 3 days straight on the couch editing from 10am until 2am 😳—and I wonder by this morning I feel like a ball of crap!😅My body is crying out for fresh air/movement/change of scenery.
I always forget that just because it’s a New Year, it doesn’t mean new habits will just stick like glue magically. It’s simply another day that we have to work at our progress and make choices with intent .
I’m choosing to view this internet fiasco as my universal sign to get off my butt and to actually go out and feel what the weather is like today and get moving! 👍🏻

Raw Mini Carrot Cakes with Cinnamon Glaze.
3 cups shredded carrots
1 cup pitted Medjool dates
1 cup walnuts
1/2 cup unsweetened coconut flakes
1 tsp cinnamon
1/4 tsp ground ginger
1/4 tsp nutmeg
1/4 tsp ground cloves
Pinch of salt
For the Glaze
1 14-oz. can coconut milk, chilled
1 tsp honey
1/2 tsp cinnamon
1/2 tsp vanilla extract
Pinch of ground cloves
1. Place the ingredients for the cake into a blender or food processor. Pulse until everything is evenly combined. Press the mixture into a mini cheesecake pan or any springform baking pan.
2. Blend together the chilled coconut cream (spooned from the top of the can), honey, cinnamon, vanilla, & ground cloves until completely combined. Spread on top of the cakes. Top with additional walnuts if desired.

•spiralize red potatoes, rinse with cold water and dry completely. pan fry in piles (I used grape seed oil) until golden brown. •meanwhile, blend 3 egg yolks, the juice of half a lemon, salt and pepper in a blender. after a couple of seconds slowly add 1/2 cup of melted butter while blender is still on. blend on high until completely combined. •top potatoes with a slice of tomato, avocado, a poached egg and finish with a spoonful of hollandaise

Who says you can only have Pumpkin Spice in the fall?? Quinoa is one of my favorite bases for my recipes and I even have it for breakfast! This morning I had a pumpkin spice sautéed apples and pear quinoa porridge. It was so easy to make and I always use my @trader Joe’s pumpkin spice mix.
1 cup tricolored quinoa
2 tsp of TJ pumpkin spice (or cinnamon)
1 apple pealed, cored and diced
1 pear pealed, cored and diced
1tbsp coconut oil.
Boil quinoa for 20-25 mins
While that’s boiling add coconut oil to medium heat and let that melt down. Coat the apples and pears in one tsp of pumpkin pie spice and add to the pan with coconut oil, sauté for about 10-12 minutes. Once quinoa is nice and fluffy add in the remaining pumpkin pie spice and mix together. Top with your apples and pears, sprinkle with a little more pumpkin pie spice and add a drizzle of honey for a little extra sweetness! ENJOY!

•40 gr (4 çorba kaşığı) kestane unu *
•30 gr (3 çorba kaşığı) hindistancevizi unu
•40 gr (4 çorba kaşığı) dut unu
•8 çorba kaşığı (40 gr) eritilmiş tereyağı veya sade yağ
•400 gr organik labne peyniri
•½ su bardağı organik/ev yapımı süzme yoğurt
•½ su bardağı organik elma suyu konsantresi***
•1 çay kaşığı vanilya özütü
•200 gr yabanmersini •1/2 su bardağı su
•4 çorba kaşığı organik elma suyu konsantresi
1-Fırını 160 C’ye ayarlayın.
2-Taban malzemelerini derin bir kapta karıştırıp yoğurun. Tereyağı ile.yağlanmış en küçük boy kelepçeli kalıba bastırarak yayın. Bir kenara ayırın.
3-Krema malzemelerini derin bir kapta pürüzsüz ve homojen olana dek mikserle çırpın. Kremayı baton kalıba, tabanın üzerine dökün.
4-1 saat 15 dakika** pişirin. Pişip pişmediğini anlamak için kenarından tutup hafifçe sallayın. Kenarları katı, ortası jöle gibi sallanıyorsa olmuştur. Fırından alıp soğutun.
5-Tamamen soğuduğunda kalıptan dikkatlice çıkarın buzdolabında 3-4 saat, tercihen bir gece bekletin.
6-Sosu için yabanmersini, su ve elma suyu konsantresini suyu çekene dek pisirin. Soğuyunca cheesecake'in üzerine döküp servis edin.

Fry dEATs: I just thinly sliced two Japanese sweet potatoes and coated them in @chosenfoods oil & @primalpalate adobo seasoning. Popped them into the oven (375F) for around 20ish minutes—tossing them halfway.
Dijon Mayo dEATs: I didn’t measure anything, but I just combined about two big spoonfuls of @followyourheart vegan mayo, a little lemon juice, black pepper, and a couple squirts of @sirkensingtons Dijon mustard!

I love pumpkin and I love smoothies!!! So I decided to combine the two.
There are a ton of different ways you can do this...but by far this is one of my favorites. It’s simple, easy, very few ingredients, and taste great! Plus it reminds me of eating ice cream because it’s so thick.
BANANA PUMPKIN SMOOTHIE - 1 med. frozen banana
- 1/2 cup canned pumpkin
- 8oz of Vanilla unseeetened Almond milk
- a few cubes of ice
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
Place all ingredients in the blender or Ninja. Pulse until done.
