Last Tuesday I got a call from a man in Ohio saying he was going to be in Utah for business and wanted to pick up an entire batch of churros for his wife and kids who’d just been diagnosed with celiacs. His wife had somehow heard about my new and small gluten-free churro company @chuhoos through social media. Crazy right?!
I’ve been learning a lot lately about the power these platforms have to connect us with people and our potential to help each other through them.
So after working a full day at the hospital nutrition center on Friday, I came home, snuggled my girl and then got to work. We had a fun but busy weekend with these little magic sugar sticks. From sharing some with our new Ohio friends, to taking some (long over due) to our new friend Scottie and @cleanmondaymeals, to teaching our cute little niece how to make them.

♡Glutensiz Çubuk Kraker
•6 çorba kaşığı (60 gr) kinoa unu*
•3 çorba kaşığı (30 gr) nohut unu*
•8 çorba kaşığı su
•3 çorba kaşığı zeytinyağı
•½ çay kaşığı tuz
•1 tatlı kaşığı domates salçası
•1 diş sarımsak – rendelenmiş
•1 tutam biberiye
1-Tüm malzemeleri geniş bir kapta/rondonuzda birbirine iyice nüfuz edene dek yoğurun/karıştırın. Ele yapışmayan bir hamur elde edin.
2-Hamurdan küçük parçalar koparıp elinizle ince çubuklar halinde yuvarlayarak açın. Veya dilediğiniz şekli verin.
3-Pişirme kağıdı serilmiş fırın tepsisine dizin.
4-Önceden ısıtılmış 150 C fırında 20 dk pişirin. Soğuduğunda servis edin. Hava almayan bir kapta saklayın.

Mmmmmm. So much for meatless Monday. I made this last night in my crock pot and it is SO GOOD. I just threw a little broth in the bottom of the crockpot, added a frozen chuck roast, and a bottle of @traderjoes Sriracha BBQ sauce and salt and pepper. Cooked it on high overnight. Pulled it out and let it cool. Just shredded and pulled the fat off. PERFECTION. I’ll serve it with green beans and DONE! 🥩🥩🥩
Southwest Chicken Sweet Potatoes today for lunch😍😍 This savory combo is SO amazingly good I can’t get enough😬 Plus they’re so easy since I slice + cook my sweet potato on Sundays then just store the slices in the freezer - when I’m ready to eat them all I have to do is toast + top with the goods🙌🏼 AND I used a rotisserie chicken👏🏼😊 Doesn’t get much easier than that!!😎 Served myself these on a bed of spinach post pic(gotta get my greens in!) and ate it all with a fork+knife😌

Happy Veterans Day everyone! Honoring our veterans today gives us a great opportunity to practice gratitude. Write down or think about a few things you are grateful for today. I find that doing this can be extremely grounding and set a good tone for the day. One thing I’m grateful for today is freedom. Freedom to make my own decisions. Freedom to live as I choose - certainly something I never take for granted. What’s one thing you guys are grateful for today?
RASPBERRY CHOCO CHIP MUG CAKE:
- 4 tbsp almond flour
- 1 tbsp @tropeaka vanilla protein powder (optional)
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 2 tbsp @so_delicious unsweetened vanilla yogurt
- 1 egg
- splash of almond milk
- 1 tsp ground flax (optional)
- a few smashed raspberries
- handful of choco chips on top
(Combine ingredients in mug or small bowl and microwave for 2 min)
Salad for lunch? Kale-lelujah! Kale salad with roasted chipotle sweet potatoes, tomato, carrot, red onion, toasted pepitas, drizzled with my maple vinaigrette. Kale yeah!! I’m Kale-ing it!! Bad-dum-bum 🥁 I’m out. Bye. 👋

Personnellement, j’ai fait les modifications suivantes pour avoir une version sans produits laitiers et sans gluten. Et c’était tout de même délicieux:
- J’ai troqué la beurre pour de l’huile de coco
- J’ai modifié la farine tout usage par 1/2 tasse de farine d’amandes et 1 tasse de farine de sarrasin .

Okay I haven’t edited all the pictures of this cheesecake that I made for my mom’s birthday, but I’m posting these quick snaps because I’m just slightly obsessed with how it turned out😂😍 It was honestly a whole day ordeal, mostly because it was my first time making a whole actual cake, BUT IT WAS SO FUN😍 I need more of my friends and family to have birthdays because I just want to make more cakes😂🎂

A quick and easy Paleo Egg Drop Mushroom soup that’s sure to get you feeling cozy!
Your choice of Chicken broth/Vegetable Broth/ Beef Broth. I mixed chicken and beef
2-3 Garlic bulbs chopped finely
1 head of Ginger chopped finely
3 tablespoons of Tamari
2-3 tablespoons of arrowroot flour (makes it gf)
1/2 tablespoon of sesame oil
Mushrooms (cremini and shiitake)
(Once soup cooked, whisk together 2 eggs and 2 egg whites and pour in slowly)
Green onion to top it off

Decided to get a little creative in the kitchen for this week’s meal prep and it was so easy to make! 😋
This Week’s Meal Prep: Honey Mustard Chicken! 🍗 Swipe & Save ➡️ recipe for your next meal prep! 👌🏻 It is so good so you definitely want to try it! 😁
- 6 Chicken Breasts 🍗
- 1/2 Cup of Raw Honey 🍯
- 1/2 Cup of Dijon Mustard.
- 2-3 Garlic Cloves.
- Avocado Oil 🥑
1. Pre-heat oven to 400 F.
2. Butterfly chicken breasts and cut off any extra fat.
3. Season chicken breasts with salt and pepper.
4. For the sauce, mix together: Honey, Dijon Mustard, Salt, Pepper & Chopped Garlic. Set aside for later.
5. Heat a large oven proof saucepan with avocado oil and place chicken in saucepan and brown on each side.
6. Then add a few spoonfuls of mustard sauce on each side of the chicken breasts. Cook for an additional minute, then pour the rest of the sauce over the chicken & place in the oven.
7. Bake for 10 minutes or until chicken is fully cooked.
8. Once cooked, pour chicken in a container with all the sauce and let chicken soak for about an hour.
9. Serve in meal prep containers with chicken & a little sauce on top, rice and your veggie of choice! ☺️

don’t have almond flour on hand? no problem! there’s tons of alternatives you can use in my recipes. pretty much any flour will substitute 1:1, each providing different nutritional benefits. this weekend, i had no almond flour😭 literally had already prepped everything else, so i tried out something new and changed up a few ingredients (used flaxmeal) and HOLYYY ISH this bread is a keeper👏🏻 flaxmeal provides a more gritty, textured consistency and it kept the bread a bit more on the moist side. it also has around the same nutritional benefits—high in protein, low in carbs, so a recipe for sustainable energy right here! if ur missing an ingredient, let me know and i can help ya find a substitution! this baby is up on the blog—it’s got a few different ingredients, it’s all around creamier, tastier, and more wholesome...and ready for y’all to try(link in bio)!
