A quick salad idea served along a grilled Steak or Chicken is delicious. For the salad dressing, I made a homemade low carb Garlic Vinaigrette.
Sauteed Garlic Vinaigrette
2 cloves Garlic, finely minced and sauteed in butter and salt (Do not burn. If that happens you can't save the garlic) until soft. Sit on paper towel to cool & drain
1/2 tsp dried Oregano leaves
2 Tbls Red Wine Vinegar
1/4 Extra Virgin Olive oil or Avocado Oil
4 to 8 Drops of any low carb Liquid Sweetener. I used Lakanto Monk Fruit Extract Sweetener, 4 drops
1/8 tsp Freshly Ground Pepper
Stir all ingredients together and let sit overnight in the fridge before serving.
For the salad, I used Crispy Iceberg Lettuce, Pepperoni, Cheddar Cheese, Tomatoes, Cucumbers, Sliced Green Onions and Bacon.
