 Pho Ga Shio Ramen 🍜
So far this is my favorite bowl of ramen that blends two cultures together. I started with a chicken chintan soup with chicken bones and scorched onions and ginger. I added some spices like star anise, corriander seeds, and cloves to get the herb qualities of #pho.
For my tare I used my standard shio tare which consisted of niboshi and katsuobushi that emulates the umami boost of fish sauce. The component that brings it all together is the "lime kosho". Yuzu kosho is a fermented citrus-y Japanese paste. It made sense to replace the yuzu with lime and use jalapenos for the pepper.
What makes this bowl a success in my book is that it has your brain bouncing back and forth between pho and ramen, but no matter what taste you're experiencing, at it's core, it still leaves you with the impression of ramen.
Whilst @bigeasylondon has a branch in Canary Wharf and is filled with bankers and other city workers during lunch and dinner, they've done more than most restaurants to make sure dishes like lobster are demystified.

Instagram is such an incredibly deceptive tool, and it’s hard not to let insecurities creep in when you’re exposed to a constant stream of perfection. It’s difficult to decipher what’s real and what’s been crafted through the magic of photoshop and sometimes I wonder what the point is aspiring for anything at all when everywhere around you, there’s people who just seem naturally talented! Nobody ever reveals the flaws, the mistakes. The stuff that didn’t work out.
But the thing is, what inspires me isn’t the prettiness and perfection I see everywhere on Instagram, but the before and afters. The then and nows. Where you started out, and how far you’ve come - it makes me believe that just maybe, I can achieve it too. For me, this account is foremost a personal documentation of my progress this year as a baker. I wanted a record of the work I put in, my mistakes and my victories. I hope that by the end of this I can look back and see how much I’m capable of, and I hope that others can see the potential that they have too.

Who says you can't have cake everyday? This vegan spiced applesauce cake takes 10 mins to prep and put in the oven!
A perfect treat to beat those Monday blues. Here's the recipe (detailed notes and step by step pictures on stories and in highlights). Prep:
1. 1/4th cup canola oil*
2. 1/2 cup brown sugar
3. 1 cup applesauce**
4. 1 tsp vanilla
5. 1 cup flour
6. 1 tsp baking powder
7. 1 tsp cinnamon
8. 1/8 tsp nutmeg (a pinch)
9. 1/4 tsp salt
10. Chopped walnuts (optional)
Preheat the oven @ 190 degree Celsius. In a bowl, mix the dry ingredients: flour, baking powder, cinnamon, nutmeg, salt. Mix together and set aside. In a separate bowl, add the canola oil and brown sugar. Whisk it till the sugar starts to dissolve. Add in the applesauce and vanilla and whisk again till everything is well mixed. Now add in the flour mix and fold in with a spatula.
Do not overmix this, just keep going till you can see no more flour pockets. (Over mixing will lead to a more bread like texture than a cake like texture). Sprinkle some chopped walnuts or any other nuts of your choice on top for a nice crunch. Transfer to a loaf tin greased well with oil and bake at 190 degree celsius for 45 mins to 1 hour till a skewer/knife inserted at the center of the cake comes out clean. After taking out of the oven, let the cake cool in the tin completely before attempting to de-mould it.
* You can substitute canola oil with regular vegetable oil.
**Applesauce is made by boiling apples in water with sugar and cinnamon till they are soft after which they are mashed up. The recipe for applesauce is under the story highlight 'Basic'.
Lunches this week - salad, @meerasodha coriander chutney (if you haven’t tried it, you haven’t lived), brined and spiced yogurt marinated chicken, topped with toasted almonds and coconut. I know Tupperware ain’t chic and instagrammable, so sue me.
