Filipino tamales is adapted from Mexican tamales through the Manila Galleon Trade. Instead of corn and corn husks, Filipinos used readily available ingredients like rice and banana leaves. Chef Sau del Rosario takes a traditionally stick to your ribs dish and lightens it up into an airy velvety consistency that you eat with a spoon. The flavors remain the same though, a balance of coconut milk, peanuts, garlic, bright orange annato oil. I can eat bowlfuls of this! Fluffy waffles with a good bite, the cinnamon was a thad distracting. Cilantro chicken fillet, breaded and fried to a divine crunch. Slightly underseasoned. Honey drizzled to balance. A dollop of herb butter for decadence.

Compli frozen creme choux from Coco. The dusting of cocoa powder is just right to balance the richness of the creme filling, that surprisingly didnt make the choux soggy. I dunno how much this sells but it sure is good! Best if you found yourself trying a spice level higher than what you're used to. Never again. 🙄
Intensité chocolat. I have to make really thin sheets of chocolate (as thin as paper) and time it right so that when I drape it unto the cake it'll create the ridges that make each and everyone unique. (Like all the stuff I like to do. Bit of a pain in ass really 😂). On another note. The tastings been moved to the 29th. If you're interested. 😊
Went over 4 years without having really good vegan pizza until I tried @crostapizzeria 🍃 The moment I had my first bite, I know I’d never have to settle for mediocre vegan pizza again.
