Craving a quesadilla? Always! Filled Stacey’s #organic tortilla shells with mashed avocado, homemade jalapeño and cilantro hummus, and sautéed green pepper, onion, and mushroom! Fold shells over to form a taco shape and grill each side for a 1-2min on a skillet heated to medium-high heat. Adjust heat and time based on browning! Served with guac and fresh salsa! Enjoy!

Whipped up our own #vegan Teriyaki Maddness! Stir fried broccoli, onion, carrot, mushroom, and organic whole wheat linguine noodles in a homemade teriyaki sauce! To make the teriyaki sauce combine 1/4 cup soy sauce, 1 cup water, 5 packed tablespoons of brown sugar, teaspoon garlic powder, and a teaspoon powdered ginger in a small sauce pan. Warm sauce until combined. Drizzle (to taste) over stir fry and reduce until all ingredients are evenly coated! Throw in air fried tofu squares, green onion, and black sesame seeds! Yum!
Cricket “tostadas” (not how they were labeled on the menu...), bone marrow tacos, and crab tamales with red “soup”. Prettiest meal we’ve had in Mexico. The cricket tostada was good, but I was ok with just having one. #foodofthefuture#protein#mexicocity
The fact that we were able to order crickets & mealworms (right here in Perth!) for dinner on the weekend makes me incredibly excited, even if @jakebtartaglia wasn’t too impressed to begin with 😬🤣 as it turns out they were actually quite enjoyable!! Why all the fuss though?! 🤷🏼♀️
ENTOMOPHAGY 🦗the term used for consumption of insects by humans, I feel, is genuinely the way of the future. Insects can convert 2kg of feed to 1kg of insect mass, while cattle need 8kg of feed to produce 1kg of body mass. Insects also produce less GHG & require less water than livestock farming, therefore consumption of insects is definitely a promising option for food of the future, so important for our growing population where food sustainability is a major concern with increasingly limited resources. Nutritionally, insects provide comparable levels of protein, fatty acids & minerals to those of meat & fish 🐷🐟 further research is still required, but definitely watch this space 👀☝️ (FAO 2018)
This week we did a workshop with the team and the board of North Sea Farm: Future Backwards Thinking. It gave a lot of inspiration and new energy to further develop our foundation. And also... It was a lot of fun!
