Fun fact - it is not all the spice. It is, however, named because it smells like a combination of cinnamon, nutmeg and cloves. Creative right?
As you would imagine, it also pairs really nicely with those spices and can work in most recipes that call for them as a substitute or a complimentary flavour.
#protip - buy and store your allspice WHOLE in an airtight container, away from direct sunlight, and grind as needed. It will start to lose its intensity 3-4 months after being ground, but can keep a higher oil content in its whole form for 9-12 months.

Flavour is always my primary goal with the #sourdough varieties that we make. A large open crumb structure though aesthetically pleasing is a secondary concern to having a well fermented light flavourful loaf. #FlavourFirst
