Breakfast Burritos on the Cast Iron Griddle
I fried up an egg on the cast iron griddle while heating up a burrito shell. Add a little cheese, close up the burrito and voilà!

Cast Iron Griddle Country Breakfast
Pancakes, eggs, and bacon all made on the @lodgecastiron cast iron griddle.
This is the first meal that I cooked on our cast iron griddle that we got a couple of weeks ago. I have been using it so much since because it is awesome.

Breakfast scene this morning! 🥓🌶🍚Poppa, Mama & Baby bowls with variations of the “macros” to suit each of us. This pic keeps making me giggle thinking about Goldilocks & the 3 Bears 🐻 .
Here’s what’s inside:
• white rice
• bacon and/or sausage
• colorful peppers
• goat cheese
• @balancedbites diner blend
Baby has started to join in on the fun, I upgraded her seat to sit in the table (um hello, why hadn’t I thought of that sooner... no more “one bite for Charlie, one bite for Murphy”). She then proceeded to boycott almost every bottle today. One day I won’t stress about her food calories or dehydrating, right?!?
Here's a protein-packed breakfast that you can store in your fridge and eat all week long!
✨Peanut Butter Banana, Protein-Packed Overnight Oats✨
1 cup cooked steel cut oats (1/4 cup uncooked)
1/4 cup milk
1/2 cup plain 1% greek yogurt
1 tbsp almond or peanut butter
1 tbsp ground flaxseed
1/2-3/4 cup of any type of fruit (sliced strawberries, blueberries, etc)
1 tbsp sliced almonds (or walnuts)
Sprinkle of cinnamon and nutmeg (optional)
> Cook the steel cut oats ahead of time (Tip: I cook steel cut oats in bulk and freeze them in 1 cup portions to use later!)
> Combine the cooked oats, and the rest of the ingredients through the banana in a mason jar or tupperware. Stir until combined.
> Put the container in the fridge and store overnight.
> In the morning, add 1 tbsp sliced almonds or walnuts, cinnamon/nutmeg, stir and enjoy!

This may look like an odd choice for breakfast but once I saw it on the menu I couldn’t move past it 😂 Warm spinach salad with red onion, goat cheese, hardwood smoked bacon and grilled salmon. Of course we had #baconbaconbacon as a starter. #familybreakfast
I wanted some French Toast this morning and remembered I had some pumpkin purée and pumpkin spice flavored creamer leftover in my fridge from my pull apart bread I made the other day, so...Pumpkin Spice French Toast, because why not?! I used my brioche loaf today, but also love a good Texas toast, instead of using regular bread. 😊
I mixed up:
2 Tbsp Pumpkin Spice Creamer
2 Tbsp Pumpkin purée
1 tsp vanilla
1 tsp cinnamon
1/2 tsp pumpkin spice seasoning
Whisked all of them together well, gave my pre-heated skillet a good Tbsp of butter, my bread a nice solid dunk on each side and cooked for about 3 min per side. Delish!
I’ve been MIA lately entertaining my aunt and cousin who are visiting. Because I can’t talk and chew gum at the same time, I haven’t taken any pictures. Lots of fun, laughter and good food have been going down here. Did take a quick pic to share of this morning’s breakfast: brown butter buttermilk waffles with chai-spiced pears, dried cranberries and toasted pecans. Candied bacon on the side! Simple Sunday Breakfast Lineup - When family or friends are staying with us I love to make “build your own” type breakfasts so everyone can add what they want .
This setup works really well for pancakes too & it’s a really simple way to please everybody . a few weekends ago when my parents were visiting I made a big batch of certified gluten free steel cut oats before they hit the road & they loved it. .
👉🏼 toppings included extra ceylon cinnamon ( @frontiercoop ), pasture raised ghee ( @organicvalley ), organic coconut flakes, grain free, sprouted granola ( @larkellenfarm ), fresh fruit (blueberries, raspberries & sliced bananas) & scoops of sprouted, organic ( @betteralmondbutter ) .

Toast Tuesday getting real once again here in Manatee County 💯🤤
Made no changes to my usual avo and egg combo 🙏🏻 if it’s not broken don’t fix it, right?? And then came out the gate hard with my pb&j toast remix, made with homemade, warm strawberry jam 👌🏻 nothing special here though, because this brekkie took about 10 minutes to throw together 💃
Pb&j toast deets 👉🏻 organic seeded bread from @publix toasted and topped with @crazyrichardspb peanut butter, some banana slices & strawberry jam (chop up 1 cup of organic strawbs and put them in a sauté pan with @traderjoes spray coconut oil. Add a 1 tsp organic cane sugar and let strawberries heat through. Once warm, smash with fork and add 1 tbsp chia seeds. Stir thoroughly and let cook another couple minutes until jam consistency starts to form and remove from heat). Top with organic, unsweetened coconut flakes. 🤤
