🍜 Here’s a 9 minute cracker for you - GARLIC BEEF stir fried noodles.
Quick and easy meal with bare minimal prep - just chop an onion, make the sauce, grab the other ingredients and you’re ready to cook! 🙌🏻

9 Minute Garlic Beef Maggi Noodle Stir Fry
2 packs Maggi beef noodles
2 tsp oil + 1 tsp sesame oil, 3 garlic cloves minced, 1/2 onion finely chopped, 150g/5oz beef mince (ground beef), big handful bean sprouts, 1/4 cup water
1 packet seasoning from Maggi noodles (it’s beef stock powder!)
2 tsp Oyster Sauce (or Hoisin), 1 tbsp Chinese cooking wine (or mirin or use broth instead of water), 1 tbsp dark soy sauce, 0.5 tsp white sugar, 1/4 tsp sesame oil, 1/4 tsp pepper
Sesame seeds and green onion
1. Mix Sauce ingredients.
2. Cook Maggi noodles in boiling water for 90 seconds (NOT 2 minutes! Finishes cooking in pan) then drain.
3. Heat oils in skillet over high heat. Add onion and garlic, cook 1 min, Add beef and cook until colour changes from red to brown, breaking it up as you go.
4. Add Sauce and cook for 1 minute until sauce reduces and thickens.
5. Add noodles, bean sprouts and water. Toss for 1 minute until sauce reduces down and coats the beef and noodles. Serve immediately, garnished with sesame and green onions. •

⭐️Red lentil dal 😀 We made this delicious dal for dinner tonight and it was the perfect winter warmer on this very cold day! The girls loved getting to use the passel and mortar to crush some of the spices. They also added everything to the pan when cooking which they’re getting more and more confident at doing. We served this with rice and pitta bread. We wanted to make naan bread but just didn’t have time🤷♀️ For the recipe:
300g red lentils
Chopped tomatoes x 2 cans
2 onions, diced
1 tbsp ginger paste
6 garlic cloves, crushed
1 can coconut milk
1 vegetable stock cube (500ml water)
1 tsp mustard seeds
1 tsp coriander seeds
1 tsp cumin seeds
6 cardamon pods
1 cinnamon stick
1- 1.5 tbsp garam masala
2 tbsp cumin and coriander powder
2 tsp turmeric powder
1 tbsp coconut oil
Juice of 1 lemon
In a bowl rinse the lentils in cold water and leave to soak for 1 hour. Use a passel and mortar to crush the coriander seeds, mustard seeds, cumin seeds and cardamom. Heat the oil in a pan and fry the onions for a few minutes. Add the garlic and ginger, followed by the spices. Fry for a couple of minutes before adding the lentils followed by the stock, chopped tomatoes and coconut milk. Mix everything together and cook for 30-40 minutes, until the lentils are cooked and liquid has reduced. For the adults I added salt and chilli powder 😋

After a rest of about 40 minutes I add the salt and gently incorporate it folding the dough.
Then I oil a container and give another fold to the dough before the bulk fermentation.

PENNE AO MOLHO BRANCO
1 pacote de macarrão penne
2 xícaras de leite
2 colheres (sopa) de manteiga
2 colheres (sopa) de farinha de trigo
Sal e pimenta do reino branca a gosto
Alho a gosto
1 tablete de caldo de carne
1 caixa de creme de leite
Orégano a gosto
200 g de queijo mussarela
200 g de presunto
MODO DE PREPARO
Cozinhe o macarrão por aproximadamente 10 minutos.
Ferva o leite.
Derreta a manteiga com um pouco de alho e o caldo de carne, junte a farinha e mexa até obter uma pasta homogênea.
Aos poucos, acrescente o leite e bata constantemente, para não empelotar.
Deixe cozinhar por alguns minutos, tempere com sal, pimenta e o orégano.
Depois coloque o creme de leite, mexa um pouco e apague o fogo.
Unte uma forma refratária com um pouco de margarina e coloque metade do macarrão já misturado ao molho.
Depois coloque uma camada de queijo e todo o presunto.
Coloque o resto do macarrão, outra camada do queijo mussarela e por cima um pouco de queijo ralado
Colocar no forno para gratinar

Not only do they taste AH-mazing they are GF, vegan, soy free & no funny ingredients so no guilt!
Sandwiched in between is just plain @siggisdairy yogurt 😋

It’s finally Friday! I survived my first week of work and getting up at 5am to workout before it 😅 I am definitely going to appreciate slow weekend mornings and making these breakfasts again even more. Sometimes all it takes is a shift in perspective! I hope everyone has a great weekend ✨
