The spices, flavors, textures...where you want to sop up every last bit with some crispy naan. 🤤 Well say hello to this Veggie Tikka Masala Naan Pizza with ribbons of zucchini, aspargus, and crispy chickpeas. 4 3 oz Naan Breads
1 cup Tikka Masala Curry (such as @pataksusa)
3 cups Mozzarella String Whips
1 Zucchini Squash ribbons
10-12 Stalks Asparagus ribbons
1 cup Chickpeas
4 tbsp Olive Oil
3 Scallions sliced
1/4 cup Cilantro Leaves
Salt & Pepper
1. Preheat oven to 400 degrees. Line two sheet pans with parchment paper and rest the naan breads on baking sheets. You should be able to fit two per sheet.
2. Line a plate with paper towels and place zucchini ribbons and asparagus on paper towels to absorb any moisture.
3. Distribute the Tikka Masala sauce amongst the four naan breads and spread over the tops. Top the sauce with mozzarella string whips, zucchini, asparagus, and chickpeas. Drizzle the tops with 1 tbsp olive oil for each pizza.
4. Place pizzas in the oven and bake for 13-15 minutes until naan has crisped and veggies have lightly browned. Remove from oven.
5. Top pizzas with scallions, cilantro, salt & pepper. Slice and serve warm.

Quesadilla ~ a crispy and cheesy treat filled with sautéed red and green bell peppers with cumin, spinach, salsa, black olives and lots of cheddar cheese. This was lightly pan fried like a grilled cheese sandwich with whole wheat tortillas. We ate a few of these during a trip to Belize 🇧🇿 We took small plane to Placencia and did our scuba certification there. The warm ocean water was crystal clear and looked like liquid glass 🌊🌞🐠

1 tin chickpeas, washed
1/4 cup @mayversfood tahini
5 pitted medjool dates
1 tsp cinnamon
3 tbsp filtered water .
