Decided to try something a little different (for me) for breakfast. I have been meaning to try this for some time but kept forgetting to make the chia seed pudding in advance!
I used about 3/4 cup @vitacoco coconut milk and 1/4 cup @so_delicious blueberry coconut yogurt and combined with 2 T @traderjoes organic chia seeds. Then, I was feeling a little wild and decided to add Autumn's Gold Grain Free Granola (from @costco) on top. Guys... I'm kicking myself for waiting this long to try it! It was so good!
Overall this combo was a little higher in sugars than I am used to, but THAT'S OK! Nobody is perfect, and I enjoyed my little morning treat ❤️ My body still got some great nourishment from the coconut milk, almonds, chia seeds, sunflower seeds, etc 🤗

Exciting news from England... we have a new kid on the block and it’s a beauty. Faun coat, a patterned head and a black striped spine just like the father Odin. My brother, who sent me this, says it’s already tearing around the field and impossible to catch (hence no confirmed gender yet). Most importantly I’m especially happy for the mother Juno, who’s first child was a stillborn and took a real toll on her, she must be feeling incredibly proud and relieved.

The sky was so beautiful today when I went for my walk. Some of the colors made it into this photo, and it reminds me how much I appreciated the skyline today. ☺️ I just love how colorful fruit is and getting the variety in is always one of the things I strive for. Mango, cherries and blueberries were exactly the right combo this morning. And as always was definitely craving some mango, and wow this one really hit the spot. Perfectly sweet. The cherries have also been super yum, and I just don’t want any of this yummy summer fruit to go away. 🍒
Mulberry Cinnamon Oats
1/2 cup rolled oats
2 tbsp dried mulberries
1 tbsp ground flax seed
1/2 tsp cinnamon
1/8 tsp salt
1/4 tsp ginger
1 mashed banana
1/2 cup milk 🥣
As per usual, mix everything except banana together and soak overnight in the fridge. Mix in banana prior to serving and adjust seasonings as desired. Top with your favorite toppings! 🍒🍒

Today was a late date for me so Greg handled dinner and it was ultra yummy. 🤩 Jasmine rice, air fried snap peas and zucchini, oven roasted tofu seasoned with adobo, and some stir fried veggie mix with mushrooms. 😛I had to convince myself not to eat all the tofu. So good! ❤️
For the tofu, set the oven to 400F. Make sure to use pressed tofu for the following steps (either press yourself by wrapping your drained tofu in a clean towel and setting it on a plate with a heavy book over top to press the water out for about 30 minutes or do it easy by buying prepressed tofu). Cube your pressed tofu, add to a large container with about 1 tbsp of light adobo seasoning, 2 tsp dried oregano, and 2 tsp garlic powder. Seal container and shake to completely coat tofu in seasoning. Take tofu out of dish and place on baking sheet. Place in oven and cook for 25 minutes until golden. 🤗

Are you overeating after dinner? 🧐
Right now is when my cravings usually set in (between 7-8pm), I crave all the yummy things. The old me would have sat down and consumed anything I could find until the point of feeling sick. Now, I have found ways to resist the urge or enjoy in moderation. 🙌🏼
Here are some tips that might help you:
✔️ Eat dinner later than usual so that your belly is full in the evening.
✔️ Ensure you have had well-balanced meals throughout the day, you should never feel like you are starving.
✔️ Enjoy one serving(measure it out) of the snack you are craving, make sure you put the rest away.
✔️ Eat a voluminous satisfying meal for dinner.
✔️ Think about your craving, are you hungry or do you want to eat because you are bored.
✔️ Bored? Go for a walk, move your body to get your mind off food.
You may have heard that eating late at night will make you gain weight. Well, it's NOT true! ❌ Eating in the evening will not but eating in excess, (going into a calorie surplus) will. If you are indulging in processed foods with little nutrients, it is easy to put yourself into a surplus as these foods are typically higher calorie!
Hands up if you use to think that eating late would make you gain weight. I sure did. 🙋🏽♀️🙋🏽♀️
