Skating at @playlandskatecenter puts a big fat smile on my face 😁 and the other night @fitnessambassadors_atx + @ovaustin rented out the whole space and we got to have a silent disco skate party ✨ with our friends @richardsrainwater, @juiceland, @weareranchhand and @fitjoy too 🙌🏼 I have the fondest memories of skating at Playland, I've celebrated many birthdays there and so now as an adult whenever I step back there I just can't help but be a giddy kid again. And I don't know about you but I could use more days where I get to let loose and just skate and dance around with my friends 👯 What's something you did as a kid that you miss? 👇🏼👇🏼👇🏼 Maybe you should make some plans to do that. the amount of zucchini I have from my garden is insane, so I just had to bake some zucchini bread bars to use up some of it! these turned out so good & are super easy to make (&healthy toooo) 🤩 .
Recipe: •1 cup shredded zucchini (squeeze out all the moisture) •1 ripe banana
•4 tbs maple syrup
•2 tbs coconut oil •1 tsp vanilla •3/4 cup coconut flour •1 1/2 tsp cinnamon
•3/4 tsp baking soda •1/4 tsp nutmeg •pinch of salt •1/4 cup chocolate chips (plus more to sprinkle on top before baking)
preheat oven to 350°. mix all wet ingredients together first, then add in the dry ingredients and the zucchini second. pour batter into an 8x8 pan and stick into oven for 30-35 mins!
What is one of those nagging goals you have that you want to accomplish before the end of the year? Mine is more vague than I care to admit, but one of mine is to establish recipes of my own that I am proud of and can teach my son someday. Not recipes I write for content or for my blog, but recipes I make often at home that will become family favorites. Do you have any staple recipes you know off the top of your head? I’ve always been more of a recipe follower than a recipe developer... but I expect that will grow as my relationship with food continues to evolve as I age. I can’t speak to anyone else’s situation, I can only share my own experiences. I’m not wealthy, I don’t consider myself to make very much money at all. With that said, my health will ALWAYS come first. Putting money aside to ensure that I can buy high quality food is at the very top of my priority list. Making time to go grocery shopping, prep meals and have a plan for what I’ll be eating is completely non-negotiable. I think I’m able to afford this lifestyle because it’s one of the MOST important things to me. It is my belief and hope that anyone reading this (anyone with a smartphone) has the ability to incorporate more quality food into their diet. I’m so grateful to live in a place that allows me such easy access to high quality, organic food. I fully recognize that this is a privilege. My hope is that the “real food” movement keeps growing and spreading to the mainstream making it easier for anyone, anywhere to access better food options.
