Nothing beats a classic... Chicken soup 🍲 I used leftover chicken thighs from 2 nights ago and boiled 2 boneless breasts to go with it. Chopped some veggies and sauteed in a little butter until soft. Then added a little salt, pepper, and a handful of fresh thyme, and the chicken. Gave a stir and let all that cook for a few minutes. Then I used 1 can of cream of chicken soup and 32 oz of low sodium chicken broth. Bring to a boil and then turn down and keep warm until your ready to eat.
Crispy garlicky cheesy bread is the perfect companion for this dish or you can serve it over egg noodles or rice.

All about yogurt-muesli bowls these days 😍 @siggisdairy coconut skyr topped with raspberry jam, banana, and a homemade muesli— a mix of granola, @bobsredmill rolled oats (you all thought I was finally having a breakfast without oats but nope 😜), and nuts! I love breakfasts like this one for SO many reasons: they are portable (perf for work!), take five seconds to throw together, and are the perfect balance of sweet, salty, crunchy, and soft. Not to mention that the protein and carbs are perfect for my post workout breakfast :) So excited for the three day weekend! What do you all have planned?
I could have waited for these chewy sweet lemon-iced pistachio cookies to cool before icing, but then there would be no puddles of deliciousness... and I was already late to work anyways ;) 💼🤓. This is my adaption on the “easy sugar cookie recipe” from @allrecipes *
Lemon-Iced Pistachio cookies: Makes 24 cookies
2 3/4 cup flour
1 tsp baking soda
1/2 tsp baking powder
1 cup unsalted butter softened
1 1/2 cups white sugar
1 tsp grated lemon zest
1/2 cup of smashed shelled lightly salted pistachios
Mix first 3 dry ingredients together and set aside.
With mixer, beat butter until whipped, add white sugar, egg, and lemon zest, beating on low after each for about 20 seconds.
Add mixed dry ingredients to wet ingredients and blend thoroughly. Mix in pistachios.
Move finished cookie dough to a ziploc bag and refrigerate overnight or for at least 1 hour.
Preheat oven to 375. Roll 24 balls, 45 grams each, and place 1 inch apart on ungreased cookie sheet. Bake 12 minutes. When cool, add icing and top with additional smashed pistachios (about 1/3 cup for 24 cookies)
In mixer, beat 2 1/2 cups confectioners sugar (powdered sugar) with the juice of 1/2 a lemon, 1/2 tsp grated lemon zest, 2 Tbsps softened unsalted butter, and about 1-2 tsps water. Add either a couple threads of saffron or 1 drop of yellow food coloring.

Today I was so tired and really didn't feel like doing anything! The dogs woke me up at 4am and I didn't get back to sleep 😴😴😴😴 My little one comes to the gym with me everyday. He dances around the room to the music and tries out all the equipment I use. Today he helped me do leg extensions and bench presses. It obviously means I have to be a bit more careful when I'm doing the exercises, and change a few of them so he can "help" me. He loves moving the mini weights around and helping me put more weights onto the machines.
If I can get it into his head that exercising and eating well is just a normal part of the day, it will be amazing for everyone involved.
So I don't give up. I exercise. I eat a varied diet, which does include haribo and biscuits, but everything in moderation. I try to be the best version of myself everyday. Sometime I succeed, sometimes I fail. But either way I learn. You can't give up just because you've had a bad day.
One way to use up all the spare bits of veg and stuff you have in the fridge, make rostis! 🍴💯👌 🍅

Thinking of something really simple , less hassle, delicious and quick to share with the crew....
Egg noddles stair fry is something really yummy and quick.cooking time #20minutes.
1 tabsp soy sauce.
2 packs of egg noddles.
2 tabsp of sunflower oil.
1 tsp salt and black chilli.
A pack stair fry vegs @tescofood will do or anywhere.
1 tsp of garlic and ginger paste.
1 tsp of parsley, Oregon and corriander, spring onions.
1. In a wok or pan place your oil and once hot add the spring onions.
Then add ‘ dry spices and fry for 2mins.
2.Add vegs and stir fry for 8mins and subsequently add you egg noddles with soy sauce.
3.stir fry for 10mins and serve with either grilled chicken or any meat of your choice. #simplemeals
and you are good to go. #happyweekend

Ok hear me out: I know it’s Friday and it’s time to indulge BUT these smoky caramelized portobellos taste allllllmost as good as bacon and I think that should count for something.
I marinated these portobello mushrooms in liquid smoke, coconut aminos, balsamic vinegar, smoked paprika and granulated garlic, then seared them in a cast iron pan on both sides til they were lightly browned around the edges. Stick them in a lettuce wrap like I did, or a sandwich, or a power bowl, or just eat them right off the plate (it’s hard not to!) Oh and add some yummy sauce on top while you’re at it; I made a vegan ranch which is 👌🏼
I was browsing through my feed and when I saw this plate of bbq salmon and grilled pineapple goodness I made over the summer I was feeling all the summer vibes. It might only be January but I can eat this anytime of the year!
Plan plan plan. Can’t say it enough. If you want to set a new routine, a new habit, you have to plan ahead and prepare yourself - mentally and physically.
Set up a morning/evening routine and visualise it. It’s something I was doing a lot back when I was competing in horse riding - I would mentally do my circuit, visualise each jumps and each turn. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
It might sound a bit extreme but it does wonders!
Physically prepare everything so you don’t have to think to much when the time come, prepare your clothes, your snacks, your bag.
When the time comes, don’t think ahead too much, you know what you have to do - you planned it so just get up and go!
If your mind doesn’t stop you, your body won’t either.
