I barely recognize that girl from 2011 with the barbell over her head. Not just on the outside but she’s change a lot inside too. Although she always seemed confident and outgoing, she always felt self-conscious of her big butt. She wasn’t certain about which direction life was leading her down. ⠀
Her confidence grew with her fitness. She’s proud of her capabilities physically and how far they’ve come. She’s proud of her drive, resourcefulness and the fact that she hasn’t let life lead her down a road but she’s chosen which one to travel. She drove her own bus instead of being a passenger on it. She knows exactly who she is now, where she wants to be and what she wants to be doing. Did this all start the day she stepped into the gym? Not directly but it was the one change SHE made that caused HER butterfly effect. ⠀
She’s proud to be 35, in good health, surrounded by great friends and family, being able to express herself in a career she enjoys and still be able to successfully snatch 145 pounds 5 times in three minutes 😜⠀
We each have moments in our life that changes our course. This was one of mine. Yes, there have been others too but this one was pretty significant for me. If you think back can you pinpoint something in your life that started your ripple effect? It could literally be anything!⠀

I hate to eat a big meal within a couple hours of working out, but I also know my body needs fuel at the right times. Sunday’s are the toughest usually, so I’ve started to eat half of my meal 1-2 hours before my workout and the other half right after. This is 3oz of grilled chicken, 1/3 cup of brown rice w/kale and 1 cup of broccoli. Then I went and helped coach a class and then worked out for 1.5 hours and came home and ate the other half. Sooo... I’ve fallen off of the wagon. I haven’t been on the treadmill in 2 weeks. I twisted my back and stopped. Well I can see it in my face. The pounds are creeping back in. I’m not going to beat myself up but I am getting back on the wagon and hope that if you’ve fallen off that you will get back in as well. Here’s to Our Health. 😊
Experimentation provides the spice in life. So I've been thinking a lot how this Thanksgiving dinner can be different and doesn't have to serve as an exercise in gluttony. If you have been following me for a while then you know, my dishes are by their nature healthful and conducive to a weight loss plan. The difficultly I have with Thanksgiving is not so much the substance as the quantity. The challenge is to respect tradition and the special holiday mood with the turkey and mash and pumpkins, but at the same time reign in the sheer quantities of food on offer. If you are like me, you also need to save some space for the creative part of you that longs to invent a couple of dishes that are new and make a statement.
This dinner is a practise run to reinvent and oldie but goodie by incorporating a few of the holiday hits within a single dish and deconstruct it in a way that you recognise the old but are enthralled with the new.

2 medium sweet potatoes
1 large yellow onion
2 Tbsp. olive oil, divided
½ tsp. salt, divided
½ tsp. garlic powder
½ tsp. chipotle powder (or chili powder)
1 head broccoli
1 lb. boneless skinless chicken breasts
½ c. BBQ sauce, divided
Preheat the oven to 400°. Peel and chop the sweet potatoes into ½" chunks. Chop onion into 1 inch pieces and add to a lined sheet pan along with the sweet potatoes.
Toss the vegetables with 1 Tbsp. olive oil, ¼ tsp. salt, garlic powder and chipotle powder and toss until well combined. Bake at 400° for 20 minutes.
Toss the sweet potatoes and push to one side of the pan.
Add the broccoli and toss with 1 Tbsp. olive oil and ¼ tsp. salt. Add the chicken breasts and brush with ¼ c. BBQ sauce.
Bake an additional 15-20 minutes at 400° until the chicken is done.
Remove the pan from the oven and shred the chicken breasts using two forks. Toss the chicken with the remaining BBQ sauce.
Add to bowls along with the roasted vegetables and serve immediately.

World's Best Steak Marinade 🤗👌🏻

⅓ cup soy sauce
⅓ cup lemon juice
½ cup olive oil
¼ cup Worcestershire sauce
1 Tablespoon minced garlic
2 Tablespoons Italian seasoning
1 teaspoon pepper
½ teaspoon salt
pinch of red pepper
1½ pound steaks, I used rib eye, New York is also great
2 tablespoons butter
fresh chopped parsley
In a small bowl, whisk together soy sauce, lemon juice, olive oil, Worcestershire sauce, minced garlic, Italian seasoning, pepper, salt, and a pinch of red pepper. Add steaks to a resealable zip lock bag or large bowl and pour the marinade on top. Marinate for 2 hours or overnight.
To make the steaks in a skillet:
Turn the skillet to high heat. Add the steaks. Cook on each side for 3 minutes or until outside is browned. Reduce heat to medium-high. Cook the steaks to the desired doneness. Mine took about 10 minutes flipping 3 times to get a medium well.
Top with butter and garnish with fresh parsley if desired.
