This beer is one of several breeds of Wagyu, or Japanese cattle, which are bred throughout the country and often associated with the area where they are raised. While Kobe Beef is probably the best-known type of Wagyu outside of Japan 🇯🇵 (Thx to @kobebryant😁), there are many other breeds, such as Matsuzaka🐂 and Yonezawa Beef🐂, that are equally or even more famous among Japanese gourmets❤.
“Kobe beef” is a type of beef, which is selected with the utmost care from “Tajima Cows” when delivered, so there are NO "KOBE COWS🙅" ”Kobe Gyu” is a privileged title only given to “Tajima cows” that satisfy the strict standards on the growing environment, breed and beef quality, set forth by the Kobe Beef Marketing and Distribution Promotion Association👌.
“Tajima cows” are 100% purebred, native to Hyogo Prefecture. Back to the Edo period and are fed only by producers designated and registered the Kobe Beef Marketing and Distribution Promotion Association. "Tajima Cows" is the name designated to cows which is shipped to the Kobe meat processing centers that are between 28 months to 64 months old.
“Tajima cows”, thanks to their fine bloodlines and a highly regulated rearing environment, produces a meat with tender muscle fibers and a beautiful marbling effect that result in a smooth, soft and velvety textured taste. .
One of my first recipes. I was very skeptical about putting this up because the pictures didn't come out great. But this dessert is silky smooth, I had to put it up. And it goes great with just about any topping like citrus, caramel or even toasted almonds. Its great to eat as it is, or can be incorporated in cakes as a filling.
