I have my Mom and my Auntie in town. They are both great cooks and life long California produce obsessed ladies. I had to take them to @margotbakery yesterday and today to @allypallyfm. We have gone out once but we all love cooking together and eating early at home. With a gorgeous spring like day a light salmon supper with avo and pickled red onions, lemon and @thehellenicdeli olive oil. Spring greens from @perrycourtfarm & blood orange @riverford, pretty pink mustard leaves from @pippettes last year that came back on the balcony + sourdough @margotbakery & fresh butter from @hookandsonfarm. Veggie ramen with fresh mint lemonade🍃🍋I love eating healthy and once in a while I do love me a big bowl of ramen! Yesterday while on a short visit to Innsbruck I found an amazing vegan bohemian restaurant called @my_indigo_official 🍜 It was absolutely delicious, definitely worth a try!
So, here’s the deal. I’m not going on some crazy fad diet. I am not completely giving up junk food, cheese or chocolate. I’m not doing a bunch of programs and gym memberships that I can’t afford. When the weather gets better and someone is here to sit with dad I will get out and walk. I AM making better choices. And that is something everyone can do. If my pantry and refrigerator aren’t full of junk there is room for better stuff. And boy does it actually taste good. Well, except the water. Those who know me will know. LoL. I’m tired of being tired. Tired of always being in pain. Want to be around to enjoy life with my husband once our days of full-time care for my dad have passed. Post Workout Dinner!! After the elliptical and my ab workout today I needed some good fuel👍 I had leftover yellow rice from mediterranean last night, Frozen stir fry veggies from costco, and one egg + an egg white. I’m working on getting by b12 from only plants so I added some nutritional yeast. Add some Sriracha and you’re good to go🤩 Anyway, I’m able to run much sooner than I thought!!!! I am allowed to run .5 miles on Wednesday to work on my form. My PT says I have a tendency to not push down on my left leg all the way through the arch of my foot. This is causing problems in my hips and prolonging the injury. Another fabulous idea from my 7 yr old Mia, what if we could order food according to its colors? Today I want to eat red, or green, or blue, or even better rainbows. Definitely colorful food for thought. 🌈 .

Lately, I’ve been really getting into and researching about superfoods like chia seeds, flax seeds, hemp seeds, and more! Superfoods are basic and highly nutritious ingredients you can add to almost any meal just to provide some extra nutritional value for your own health and body 💖
For this meal, I added in some @suncorefoods hemp seeds into the avocado mixture just to add some more nutritional value to this meal ! Hemp seeds are rich in healthy fats and essential fatty acids. They are also a great source of protein, vitamin E, phosphorus, potassium, sodium, magnesium, sulfur, calcium, iron and zinc. Because of these hemp seeds, there is so much more nutritional goodness going on in this dish🙈❤️
SWEET POTATO TOASTS
✖️1 sweet potato
✖️1/8 tsp salt
✖️1 tsp olive oil
✖️1 tbs @suncorefoods hemp seeds
1. Slice the sweet potatoes into thick slices. Bake the Sweet potatoes slices at 350 F for 25-30 minutes or until they are fully cooked
2. In a bowl, mix the avocado, lemon, and oil together until well combined. Add in the tomatoes, salt, and hemp seeds and continue to mix until well combined.
3. Add this avocado mixture on top of the baked sweet potatoes
