Crickets are often the first experience that Americans have with #edibleinsects; so much so that there is even a great documentary entitled @thegatewaybugfilm. We feel an obligation to work with crickets more this year to help unlock and understand its flavor for chefs and cooks to be able to further utilize it as an ingredient, and broaden its culinary applications.

We are refining our fresh #edibleinsects biscuit recipe. 200gr of fresh mealworms will make the perfect amount of insect powder to mix with 1kg of flour. Just add your favourite toppings to the mix. Full video will follow.

@npr reported that researchers want to know how to make insects more palatable for westerners, as they are a very environmentally-friendly protein alternative to meat. So, they advertised these truffles to 180 volunteers with the phrase "Eating meat has never been so _______,". They ended the sentence with either "good for the environment," "good for the body," "exotic" or "delicious." People who heard the last two were more likely to try the truffles.
While being eco-friendly is certainly a benefit of eating insects, it will take a different marketing approach to get people over the hurdle. As we've seen with our own clients, environmental messaging works best when it's about the "why" instead of the "how" - people just need to see how the environmental option can benefit them. .

My family is so thoughtful - my sister gave me these little bug cookie cutters to help me make chocolate chirp cookies as beautiful as they are nutritious and delicious! Mealworm snack anyone? 🐛🐜 Throwback to the time, i had mealworms for the first time at a fancy restaurant thanks to my buddy @razifhasim. Since then i've been on the hunt for edible insects. Crickets especially! Btw these are dehydrated cooked bugs.

50 Baht, AKA two dollars, gets you a bag of mixed bugs. No cicadas though. That’s gonna cost ya. Just the smaller varieties for 50 Baht. We unintelligibly selected three species, and consumed what turned out to be a Beetle Worm. I was optimistic for this moment. I’ve half pinned my hopes on a sustainable future and regenerated earth via the global consumption of bugs as a primary food and protein source. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Now I’m not so sure.
But the market was ALIVE. Cacophonical colours and confronting aromas, monks chanting persistently through the chaotic storm while the energy from the food stalls matched that of the Thai streets that wrapped around it. Kali is on her element in these places. Willing to eat anything, ride everything and touch all things ... her adventure gene is ignited. Me and Will are more conservative in our approach. He cries a little, I weep gently. Kali eats bugs. She’s awesome.

Being a woman in society means constantly being underestimated until you prove them wrong. It seems like ever since I was a teenager, I was doing things that people told me women “shouldn’t” be doing. I enlisted in the military at 17 when others told me it was “no place for women”. I was told at a young age that I didn’t have to “work as hard” because I could just marry a rich man. This has only motivated me more to be successful and pave my own way. Also, people told me girls shouldn’t play in the dirt or touch bugs. Good thing I didn’t listen because, @fearfactor $$$ 😂😂😂 #FOLLOWYOURDREAMS#EATBUGS#ANDSTUFF#barbellbrigade#womensworld
