Multi-purpose Sheet Pan Chicken
Ever since I posted the recipe back in October for sheet pan fajitas, I’ve been using that technique to cook ALL of my chicken. I don’t think I’ll pan saute’ ever again, and I don’t have to rely on my husband to work the grill. Miracles never cease, because guess what...I haven’t purchased frozen breaded chicken tenders for my soon-to-be 9y/o since I made him his own section of the sheet pan fajitas with just olive oil, lime, salt and garlic powder.
Cutting chicken into bite-size pieces, tossing them in whatever spices you like, baking at 400 for 25 minutes then (very important) broiling for 5 minutes yields incredibly.good.chicken. Chicken to add to salads during the week. Chicken to add to bowls, or mix in with sauces. Chicken to feed a child who has lived off of artificial ingredients for way too many years.
Each week I’ve been getting two large packages of tenders, quickly slice them up into nuggets, and onto two sheet pans they go. The nugget shape is important because this way all sides get browned when broiling. I always make one pan with lime and then the other according to what we’re in the mood for.
Some ideas, aside from the sheet pan fajita seasoning that I posted back on 10/23:
-olive oil, lemon juice, salt/pepper/garlic powder, which is a good basic starting point, or even whip up a quick piccata or Marsala style sauce to top these with and serve with pasta
-Italian seasoning, add to marinara and pasta
-sesame oil, soy sauce, garlic powder with some rice and veggies in a bowl
-olive oil, sumac, lemon for a hummus and basmati rice kind of thang
-Cajun seasoning, which works with anything (pictured)
Y’all. I crushed dinner tonight. I made the @thepioneerwoman ‘s chili. SO GOOD. I left out the masa, because I didn’t have any and because I was going to make cornbread dumplings which I’ll get to in a second, and used black beans instead of pinto because that’s what I had. Other than that I followed the recipe pretty closely. This chili is excellent! Now. Then I made cornbread dumplings. I saw a chili recipe in a tasty video yesterday and they made cornbread dumplings. I didn’t use their chili recipe but I thought I’d try the dumplings. They looked weird dropping into the pot, but they turned out great! I posted a picture of the recipe for the dumplings, mix dry ingredients first then wet and scoop right into the pot after the chili is finished cooking. A quick fried shrimp. Yes, I used regular bleached white flour and canola oil. I would opt for a different type of flour... but that’s what I had. Anywho. Lentil Spinach Soup 🥣

Since I have upped my workouts and this cold weather hit the island my appetite is thru the roof! Some of these new recipes you will notice are a little more hearty than I normally make during the summer time. In any dish I try to avoid anything canned or prepackaged as much as possible. I would much rather add a starchy veggie or a grain thats higher in carbs than anything out of a can or box that contains lots of sodium. So when going with heartier dishes I add potatoes (my fave food in the world-made any way), sweet potatoes, brussel sprouts, different grains, polenta and beans. I find these really help fill me up and typically kill the craving for pastas and breads.
My motivation today was definitely lacking for making dinner, so I wanted to make something quick and filling. This dish turned out so much better than I anticipated. The rosemary just takes it to a whole new level of plain steak and potatoes. New Recipe Below!!! Grass Fed Sirloin Steak seasoned with kosher salt and pepper.
Place a large skillet over medium high heat, add 1 tbsp of olive oil and sear the steak on both sides, once seared turn the heat down to medium low to cook the steak to medium/rare. About 3-5 minutes. Pull and set aside to rest.
To the same pan over medium/low heat add 4 tbsp of unsalted butter and approx 1 cup of fingerling potatoes sliced in half-face down, season with 1 tsp crushed rosemary @mccormick, 1 tsp of kosher salt and ½ tsp fresh cracked black pepper. (see 2nd picture) By placing them face down they will get a nice crunch on them and cook the quickly. Cook for
about 5-7 mins, then add 1 cup of sliced button mushrooms. Sprinkle a little more salt and pepper and 2 tsp minced garlic. Toss and cook until mushrooms are softened.
To plate, place arugula on the bottom of the place, and using a slotted spoon (avoiding any extra butter) place the mushroom/potato mixture over the arugula, sprinkle with a little parm
cheese, then thinly slice the steak and place over the potatoes. Sprinkle with a little salt and it’s ready to serve. Enjoy!!! #grassfedbeef#beef#steak#potatoes#mushrooms#arugula#easymeals#recipe#dinner#steakandpotato#cookingram#cook
I’ve made my favorite stew again! If you’re a fan of peanut stews you need to try this Gambian one. It’s called Domoda if you’d like to google a recipe. I make mine with beef but it can be done with chicken or even vegetarian/vegan.
I added a few extra hot peppers because I’m the only one who will eat this (kiddo hates potatoes of all kinds) so this is going to be delicious! Also, I’m going to have leftovers if anyone wants to bring over a container🔥 🔥
At some point I’m going to make bread to go with this instead of rice, but if you know me you know how terrible I am at making breads. If I’m baking, send help.

There aren’t many kiddiwinks who don’t put pasta in their Top 10 favourite meals and we’re quietly confident, based on the gobble speed of our kids and their daddies, that this dish would take one of those top spots. .
A lip-smackingly good herby pesto, packed full of nutrients, is the perfect companion for the delicious San Remo Pulse Pasta. We’re not the only ones who are huge fans of this fabulous gluten-free pasta alternative: it was recently voted Product of the Year 2019 in the pasta and rice category at the coveted 2019 consumer’s choice awards. Made using flour from pulses including peas, lentils and chickpeas instead of wheat, it’s a great source of iron, vitamin B1, fibre and plant protein, which support gut health, help to keep little (and big) bellies fuller for longer and provide slow-releasing energy. .
Throw together the pesto in minutes - less than it takes to boil the pasta in fact - and you’ve got yourself the perfect dish to enjoy with family and friends this summer. Just don’t take too long to tuck in or you might miss out! .
140 g (1 cup) sunflower seeds
30 g (1 cup) coriander
30 g (1 cup) baby spinach leaves
10 g (1/8 cup) nutritional yeast
2 garlic cloves
juice and zest of one lemon
125 ml (1/2 cup) olive oil
250 g (2 1/2 cups) San Remo Pulse Pasta
4 - 5 broccoli florets, steamed
Toast the sunflower seeds in a medium sized skillet until golden and fragrant. Let cool.
Place all remaining pesto ingredients into a high-speed food processor and mix until well combined.
Cook the pasta until al dente, drain and place back into the pot. Then combine by hand with pesto and add broccolini. Drizzle more olive oil if needed.
Serve warm. Also great for a next day lunchbox.

I made this mushroom chickpea soup w kale a few weeks ago and it was SO GOOD. Does anyone else agree that adding chickpeas to anything makes it 10x better. 😛 Recipe 👇🏼
garlic finely chopped
fresh ginger minced
other veggies of your choice
2 tsp soy sauce/tamari use gluten-free soy sauce if needed or Coconut Aminos to make soy-free
2 tsp rice vinegar
Cumin, cinnamon, cayenne, salt, garlic and onion powder
2 cups veggie broth or water
1.5 cups or more water
cornstarch to thicken in the end if needed
Heat oil in a saucepan over medium heat. Add onions, garlic and cook for 3 minutes or just about translucent. Stir occasionally.
Add mushrooms and mix and cook for 3 minutes or until they starts to get golden.
Add ginger and veggies and cook for a minute.
Add chickpeas and spices and cook for 2 minutes.
Add soy sauce, vinegar, sugar, broth and water. Partially cover and cook for 15 minutes. Add salt to taste and mix. Add in the greens. Cook until wilted. Taste and adjust flavor as needed. Reduce heat to medium-low. Continue to simmer for another 10 minutes.
To thicken, mix 2 tsp cornstarch in 2 tbsp water and mix into the soup in the last 5 minutes. Bring to a boil.
For many reasons we’ve been trying to eat less meat. One of my favorite cuisines is Indian and Tyler agrees! We found some paneer cheese @wholefoods and decided to make a spinach saag over brown rice last night. It was mildly spicy and loaded with spinach— but everyone— even picky little Ellis— ate it all up! I’ve learned to never assume with kids... how will you know what they won’t eat unless you keep trying again and again??

to prepare the salmon: preheat your griddle or pan on medium heat until hot. rub the fillet with garlic salt, lots of pepper, and sear in EVOO for 4 minutes on each side (fillet side first then skin side).
I sautéed the zoodles with garlic, salt and pepper in EVOO for 2-3 minutes. rice noodles took only 5 minutes to boil, and I just added some olive oil, salt and garlic powder. THAT’S IT🙌🏻 #healthymoodsf

Almond flour blender pancakes
4oz of cream cheese (microwave 15-30sec)
4 eggs (room temp)
3/4 cup of Almond flour
1 tsp baking powder
1-2 Tablespoons of sweetener
1/2- 1tsp vanilla
1/8 tsp Cinnamon
Coconut flour pancakes
•4oz cream cheese
•4 tableapoons of coconut flour
•1 1/2 teaspoons of baking powder
•1-2 tablespoons of sweetener or liquid sweetener (I use liquid stevia)
Optional but I always use
•1/2 tsp cinnamon
•1 tsp vanilla extract
•1/2 tsp maple extract
-Put all ingredients in blender... blend for 45 seconds - 1 minute. -Let sit for 10mins before cooking -enjoy with butter and SF syrup *you can freeze and warm up in toaster or microwave.

I was distracted watching the sunrise this morning (it was beautiful here 😎like cotton candy skies) so I ended up making myself some avocado toast w/ a fried peppered egg for my pre-workout fuel since i'm going a little later than usual -and my tummy was growling took about 6 minutes to whip up and 5 seconds to inhale lol.
