Found some orange and purple cauliflower at Whole Foods the other day. I love the combination of the two colors! 😊
So tonight, I pan seared some boneless pork chops (seasoned with TJ's Everything But the Bagel and topped with avocado) and sauteéd the cauliflower in coconut oil with some cajun salt. Was a hit with the hubby! 👍😄

🌿Ingredients (serves 2):
- 1tsp garlic - 1tsp tomato purée - 1 tin of chopped tomatoes - 1 tin of chickpeas - Handful of spinach - To taste: chilli powder, smoked paprika, teriyaki sauce, Himalayan rock salt
- Brown rice .
🌿Method: basically just throw it all together in a pan! 🙌🏻

Weight loss of 1.8lbs this week! I’ve stayed fairly strict to my clean eating and portion control. I did indulge last night with a little fettuccine but it didn’t hurt me because my weight loss is still going strong. Feeling fantastic, lots of energy and clear minded. I still haven’t decided on a gym and I’m sure some of you were thinking “why is this so hard for her?” But I locked myself into a contract with the gym a couple of years ago and halfway through my contract decided that this gym didn’t have what I needed. So this time around I want to make sure that I am getting the best bang for my buck so to speak. I want to make sure that the gym I pick has all the machines and perks that I’m looking for. Street cooooooorn! Ever since I made the street corn dip a couple weeks ago, I knew I wanted to make some on the cob (baked!).
Bake some corn on the cob at 400F for 25 minutes. In the meantime, mix 1T ghee — found on @vitacost#vitacostVIP — with 1/4c light mayo.
Once the corn is cooked, spread the ghee mixture onto each cob, top with cotija cheese, fresh herbs (I had parsley on-hand, but cilantro would be better), and sprinkle with ancho chili powder (also from @vitacost).
Full disclosure: after this pic I ate the tips off of each cob where all the goodness is. 😂😎

Easy Healthy Tasty Dinner Recipe
Baked Cauliflower and Tofu
1. (16 ounce) package firm tofu or 1 (16 ounce) package extra firm tofu and one cauliflower
2. 4-6 tablespoons soy sauce
3. 1 -2 minced garlic clove, to taste
4. 1 tablespoon fresh grated ginger, to taste
5. 1 tablespoon rice vinegar
6. 1 -2 teaspoon honey (optional) or 1 -2 teaspoon sugar (optional)
7. 2 tablespoon olive oil
Drain tofu and cut into 1" cubes and cut cauliflower into small florets
Mix all other ingredients together except olive oil.
Pour marinade over tofu and cauliflower saving 2 tablespoon
Refrigerate for 15-30 minutes
Lightly grease baking pan or sheet with olive oil.
Arrange tofu and cauliflower in single layer on sheet, making sure not to forget the garlic and ginger from the marinade dish.
Bake at 450 degrees F for 20 minutes, flipping tofu at least once during the process, until brown. Pour 2 tablespoon of marinade over baked tofu and cauliflower.
🍎🍖rosemary pork loin🍖🍎
This delicious loin recipe is so simple you’ll be shocked! All we do is prep the pork and stick it in the oven! Pork loin was 12$ a piece and both of these fed 8 people! (PREP TIME: 10 minutes COOK TIME 2.5-3 hours)
- pork loin (approximately 1 - 1.5 pounds)
- dried rosemary
- salt & pepper
- olive oil
- apples (optional, for flavoring)
- preheat oven to 375f
- pat down pork loin with a paper towel to remove excess moisture - cover all sides of the pork loin with olive oil, then salt/pepper/rosemary. Make a nice crunch coating of spices around the loin
- bake at 375 for 2.5 - 3 hours. Use a meet thermometer to be sure, pork should be between 160-170f inside
- you may need to remove the apples halfway through as they begin to caramelize in the oven

👉🏻Licuar todo, poner en un moldesito chico donde quede al tope y llevar al congelador por 20 minutos
👉🏻Sacar y raspar (notarás que esta duro por fuera pero sigue un poco suave por dentro, entonces cuando raspes trata de acomodarlo después otra vez todo aplastándolo con una cuchara, vuelve a meterlo otros 15-20 minutos, raspa haz lo mismo y listo! Quedará cremositoooo y delicioso! (NO SE PREOCUPEN no les va a saber a carbón, da un ligero toque pero neta no sabe) Está perfecto para este calorooon por lo menos de Culiacán, casi me calcino del calor y eso que todavía no son los calores fuertes 🙃🔫 JAJAJA -

I love hoisin sauce but I don't love typing it because autocorrect made me have a mental breakdown since it kept changing it to the word 'housing' SO.MANY.TIMES. .
This hoisin chicken salad works well on its own, as a side, or you can have it on a toasted English muffin! (toast with butter)
