I am super excited to be back on keto!
Dinner tonight is almond crusted tofu with sauteed mushrooms and asparagus.
If I eat everything I made, and I will, it's only 7 net carbs.
I cut up a block of sprouted tofu from Trader Joes, dipped it in oil olive, and then dipped in a mix of 1/4 cup of almond meal, 2 tablespoons of nutritional yeast, salt and pepper. I cooked it in the oven at about 400° and flipped it... when it smelled like it was that time.
I sauteed about 3/4 cup of mushrooms and 12 asparagus spears in Earth Balance.
Meatless Monday Inspiration!!! 🚫 We eat 'meatless' several nights a week around here but I wanted to feel trendy tonight and post special for the #meatlessmonday followers! 🤗 ....
✅ 12 oz. Jumbo Pasta Shells (boil as instructed)
✅ 2 Balls Buratta Cheese (blend one into the filling mixture and reserve the other to tear + spread along the top before baking)
✅ 2 lbs Ricotta Cheese
✅ 4 handfuls of sauteed + chopped Spinach ✅ 1/2 roasted butternut squash cubed ✅ 1/4 cup Pinenuts
1 /2 cup of @earthbalance butter spread browned w/ 3 cloves of minced garlic. ....
👉 Boil shells as instructed. Mix together filling breaking apart 1 Buratta Ball into the blend. Fill shells - I like them stuffed to the max. Saute "butter" + garlic in fry pan. Pour browned butter sauce over shells + tear remaing Burrata Ball along the top. Bake covered with foil until warm all the way through.
TIPS: NO Balls NO problem sub Mozzarella. Love cheese? You could also add parmesan on the top. Growing fresh basil? Toss a few leaves in there if you have it! No kids and like spicy food? Add in crushed red pepper to the brown butter step bring out the heat in this dish. 🔥

Mac ‘n’ Cheese Monday!🧀😋Creamy, delicious, #vegan comfort food 💁🏼♀️ Sometimes, ya gotta keep it simple 🤪 (adapted from @sixvegansisters)
12 Oz #glutenfree macaroni elbows
1/4 Cup vegan butter
1/4 Cup spelt flour
1 tsp minced garlic
1 tsp whole seed mustard
1 tsp paprika
1/3 Cup nutritional yeast
2 Cups unsweetened #plantbased milk
2 Cups vegan cheese
Salt and Pepper
Prepare pasta as directed. Meanwhile, melt butter and whisk in next 5 ingredients to make a roux. Slowly add in milk until heated and then stir in cheese. Fold in macaroni and sprinkle with salt and pepper to taste! ❤️ #nimaiskitchen#EarthBalance
I now have vegan cream cheese, besides my Earth Balance no soy butter, as a choice for your vegan breakfast bagel. Don't hesitate to ask for it when you stop by for a visit.

Now to add some #milkfree and #soyfree butter! It’s nice that SO MANY stores are starting to carry #EarthBalance butter. I get ours from #Walmart, #Kroger and #Publix depending on my time and budget. The maple syrup is a GREAT buy at #Costco. I LOVE how it’s USDA certified organic without being so expensive. The #BirchBenders#Paleo pancake mix turned out okay. You have to cook them on a medium low heat so the can cook without burning them. I made the mix for 12-14 servings, but looks like it only makes enough pancakes for 7-8 servings. I’ll have to double the recipe next time.😉

☕️Been feeling creative with the morning coffee lately! My favorite experiment so far has been a Maple Brown Sugar Latte 🍁 I got to try some macadamia milk from @milkadamia so I decided to make the recipe completely dairy free! Feel free to make substitutions as needed, but this is a must try! Just don’t forget the maple cookies🍁They are like Oreos, but a billion times better!! Latte recipe and macros👇

🍟 Vegan Poutine🍟 aka Fry Heaven.. what else would you make on FRYday?! 🤤
Bake some fries to crispy perfection (toss cut russet potatoes in olive oil, salt, and paprika) 400° until crispy.. my oven takes about 40 mins. Could always go oil free but the fries get softer while under the gravy so I like to start with some major crunch 😋😋 Then make your gravy, top with @followyourheart mozzarella shreds, and slice some green onions 🌿 DELICIOUS!!! I tested a "typical" gravy too and I prefer this mustard gravy with the fries.. adds a nice tang 🙌
3 tbsp vegan butter @earthbalance
2 tbsp flour
2 cups vegetable broth
2 tbsp yellow mustard
1 tbsp soy sauce
1 tsp tapioca starch
Add butter to a pan on medium heat, once melted whisk in flour and gently cook the flour for 2-3 minutes turning the heat down if needed, continuously whisking to not allow for burning. Heat back up to medium/med high and add in veggie broth mustard, soy sauce, and tapioca starch.. whisk to combine, and let gently simmer for 3-5 minutes until it's thickened slightly. If it's too thick add more veggie broth.
To build poutine: add crispy fries to a dish, cheeze, gravy, more cheeze if you like to live dangerously, green onions, and freshly cracked black pepper. I've also added cheeze to the baked fries and popped them back in the oven for 5 mins.. great either way 🤤🤤🌱🍟
