Banana Nut Pound Cake 🍰
Traditionally, Pound cake is made with a pound of each of four ingredients: flour, butter, eggs, and sugar. Pound cakes are generally baked in either a loaf pan or a Bundt mold.
This Banana Nut Pound Cake has the classic pound dense cake texture, is very moist, absolutely delicious and doesn't need any topping.
Serves: 2 loaf (8×4-inch)
Prep Time : 15 min
Cook Time : 1 hr.
👉 2 cups granulated sugar
👉 1 cup unsalted butter, softened.
👉 6 eggs
👉 1 cup mashed ripe banana.
👉 1 1/2 tsp vanilla extract.
👉 1/2 tsp banana extract.
👉 3 cups All purpose Flour.
👉 1/2 tsp baking soda.
👉 1/2 tsp salt
👉 1/2 cup chopped walnuts.
👉 Preheat oven to 325°F.
👉 Grease & sprinkle flour two 8×4-inch loaf pans, set aside.
👉 Sprinkle 1/4 cup walnuts in pans.
👉 Beat the butter & sugar in a large bowl using an electric mixer on high speed until it's light and fluffy.
👉 Add eggs, one at a time, beating well after each addition. Add vanilla and mix well.
👉 Measure and take the flour in a bowl. Use exactly 3 cups of flour with flat top. DO NOT take too much flour. 👉 Whisk together flour, baking powder, and salt.
👉 Add flour mixture in three additions, alternately with bananas in two additions, mixing on low speed until just combined. DO NOT over-mix.
👉 Stir in remaining walnuts.
👉 Pour batter into prepared pan. Bake for an hour or until a toothpick or cake tester inserted in the center comes out clean.
👉 Cool cake in pan for 15 min.
👉 Remove cake from pan and cool completely on a wire rack..

Scrumptious chocolate from @pinellaschocolate. I picked this up as a little Christmas treat for myself the last time I was at @81baymarket. (Of course, I got @therealfrenchghost their datil pepper chocolate. 🌶) I’ve been saving mine to share with a coworker and today was the day we finally broke into it. It’s the most amazing dark chocolate with orange! 🤤 Highly recommend this and it makes it even sweeter that it’s from a local chocolatier! 🍊 (Also, I have found several new local favorites at @81baymarket. If you’re in Tampa, you definitely should check it out. Pinellas people, I’m always down for the drive up so hit me up if you want to go! But do be aware that I might drag you to a free Zumba class beforehand, LOL.)
