|| Pumpkin chicken. ||
Pumpkin is considered as a premium ingredient across the globe. A lot of cuisines has serious influence of Pumpkin, however Pumpkin has limited use cases in Indian cuisines.
ingredients==== 500 gms chicken (mostly breasts) cut to small pieces, 150 gms curd, 250 gms pumpkin (fresh and chopped), onions, chicken masala, mustard oil, lemon juice, cumin seeds, chilly powder, Ginger garlic paste, black pepper, salt and turmeric powder.
Recipe==== Marinate the chicken with salt, mustard oil, chicken masala, ginger garlic paste, chilly powder, black pepper and curd, deep freeze it for an hour .In the meantime heat up your pan, put some oil and let the oil heat ,add cumin seeds and fry them, add chopped onions, ginger garlic paste, salt and fry well till the onions become transparent, add the well chopped, well peeled pumpkins in it and cook well in medium flame, add chilly powder and stir well, adjust water to get little thick gravy and cook well for 30 minutes, we will get an well cooked pumpkin mix , put it aside on a container and let the pumpkin cool. Once the chicken stays marinated for an hour take it out ,heat the pan add oil, add onions, ginger garlic paste, chilly powder, chicken masala and turmeric powder fry till the onions become transparent. Add the marinated chicken and cook well for 45 to 50 minutes, keep on adjusting water so as to obtain a thick gravy based chicken preparation, by this time the chicken is cooked well with great flavours intact, now add the pumpkin mix to the chicken preparation and mix well, let it cook for 10 minutes to get your pumpkin chicken. Add lemon juice and well chopped coriander leaves , pair it up with rice to serve.
Possible influence==== Experiment with masalas like garam masala, khara masala for a more flavourful experience, you can put the pumpkin mix in mixie to obtain a better gravy material.
Broccoli Gratin 🥦.
Boil nearly 500 gr broccoli (break into bigger pieces) for about 5 min/until they soften (not too much). In a pan, put 2 tbsp butter, melt, add 2 tbsp all purpose flour, stir until it changes color, add 2 cups milk, salt and pepper. Boil, until it starts to thicken. Place these: broccoli-sauce-broccoli-sauce-1,5 cup any cheese melting. Bake at 200 degree preheated oven until cheese changes color.
Brokoli Graten 🥦.
Brokolileri iri parçalara ayırıp haşlayın, cok yumusamadan ocaktan alın (500 gr). Ayrı bir kapta, 2 yk tereyağ eritin üstüne 2 dolu yk un ekleyip kavurun, son olarak 2 su b süt, tuz karabiber ekleyin, kıvam alana kadar pişirin. Leftover salmon, sweet potato noodles, and veggies 🤗 Salmon sunday dinner has never looked better 😎 It’s always better when you’ve got leftovers + you didn’t make it yourself 💯 The salmon was leftover from eating out last night and the sweet potato noodles were leftover from a few days ago! Sweet potato noodles come out sooo crispy- they almost taste like curly fries 😋 Cooked mine in avocado oil and it made them so perfect! Spiralizing a bunch of veggies at once saves so much time 👌🏻 just store them uncooked in the fridge and prepare when you’re ready! I did a mini grocery run + mini meal prep because we’re heading home on Wednesday for Thanksgiving! Mini meal preps > regular meal preps 🙌🏻 It’s always nice to have a stocked fridge again! My method with meal prepping is to make a lot of different things to pair together throughout the week- keeps things interesting vs getting boring! Do you meal prep “meals” or separate pieces?!
