creamy avocado and spinach pasta

10 oz spaghetti or fettuccine (I used semolina pasta)
1 clove garlic
1 cup fresh spinach
½ cup pecans
¼ cup basil
¼ cup Parmesan cheese, grated
1 tbsp fresh lemon juice
¾ to 1 cup pasta water
salt and pepper to taste
Cook the pasta according to the instructions on the package.
While pasta is cooking, add the rest of the ingredients to your blender and blend until it turns into a smooth sauce. Start with ¾ cup of pasta water and add more as needed to get the consistency you want.
Toss the pasta with the sauce in a bowl and serve immediately. This sauce is best served the day it is made, as it uses avocados which will turn a brownish color.

Had udon in a mushroom broth for dinner. The seasoning doesn't actually have mushrooms, but other things to make it taste like it. The main ingredient of it seems to be sardines. I hardly ever use noodle seasoning packets, because of the salt content. However, this one's not bad and I usually don't get enough salt in my diet. So, it's ok for me. The noodles were fresh. Just had to cook them for a couple of minutes. It was really good. #dinner#soup#noodles#udon#broth#mushroom #🍜

Is it just me or does everything taste better in a bowl? I think I eat 99% of my meals in a bowl 🙆🏻♀️ This was the second time I made this EGG ROLL IN A BOWL because it’s that dang gooood 🤤 and easy and doesn’t require the oven! 💯 Perfect for these warm summer nights!
Recipe inspired by @bitesbymi: in a large pot, add 1Tbls sesame oil + half of a chopped sweet onion + 1Tbls minced garlic. Sauté for a few minutes and add 1/4C coconut aminos + 1tsp ginger + salt and pepper. Add in one head of shredded cabbage and a big handful of shredded carrots. Stir occasionally until cabbage has wilted and add in cubes tempeh (or protein of choice), mung beans and green onions. Enjoy!

I’ve tagged most of our fave fridge staples, and then we also have lots of fruits/veggies prepped in containers and ready for munching. There’s spinach + green leaf lettuce in the crisper, as well as bananas, sweet potatoes, tomatoes, and avocados chillin’ on my counter. 🥑😎
I also prepped a few things that didn’t get done till after this pic: ground turkey, crockpot chicken (flavored with carnitas simmer sauce 🤤), brown jasmine rice, sweet potato fries, + steamed broccoli. 🥦
I think it’s safe to say I’m ready for the busy week ahead! 👯♀️ And ready for BED! 🛏
