This deceivingly simple dessert is prepared overnight by continuously churning thick and creamy milk until the froth can be separated from the milk and cream. A foamy touch of saffron-infused milk is added for flavouring, with these cottony clouds of froth topped off with grated nuts and powdered sugar, before being dished out on street corners during the winter months. Do you know why Daulat ki chaat is famous ?
It comprises raw milk that is mixed with cream & cooled over an ice slab overnight. After 8-10 hours of cooling, a portion of this is removed and whisked by hand until light and frothy. This sweetened milk mix is then blended with khoya and chenna. Served in ‘donas’ or ‘kulhad’, this nutrient-rich dish is topped with extra khoya and a pinch of a saffron mixture. Mostly Daulat ki Chaat is served at the streets of Old Delhi.

Delhi Winters calls for a Daulat Ki Chaat - Made overnight by churning milk until the froth can be separated from the milk and stored over a vessel with controlled temperature (over ice) ,to make the forth stable, it is then flavoured with powdered Sugar, Saffron and Nuts. It’s Like having mill froth with a perfect balance of sweetness.
DAULAT KI CHAAT
Celebrate one year of Demonitization and treat yourself to this sweet Daulat Ki Chaat with refreshing rich flavours from the streets of Delhi & its one of our favourites too!
Recipe given below 👇🏻
Daulat Ki Chaat
Full cream milk or Buffalo's milk – 1 ltr
Dairy cream (full fat)- 1 tbsp
Cream of tartar – 1 tsp
Silver leaf (chandi ka vark)– 3-4
Castor sugar – as per taste
Chopped pistachios (boiled & de skinned)– 1 cup
Saffron (Kesar)- 10-15 strands
Boil the full cream milk.
Once cool, add dairy cream and cream of tartar & refrigerate it overnight.
Next day, whisk it in a bowl and keep removing the froth in a plate
Drain the milk from the froth plate & refrigerate it till set.
Add saffron strands to the remaining chilled milk.
Whisk it & keep removing the saffron froth in another plate
Drain the milk from the saffron froth plate & refrigerate it till set.
In a mini chaat bowl put the plain froth first & then the saffron froth
Sprinkle some castor sugar and chopped pistachios on top
Garnish with silver leaf (chandi ka vark) on top & serve!
