Loaded Honey Chipotle Chicken Tacos
In my last post, I mentioned that I cleared out the fridge and used leftovers. Well some of those leftovers came from this meal that we had Valentine's day; which we don't celebrate 😅🙈
This was so Easy and Delicious!
First I shredded 2C red cabbage, put in a bowl and pour ⅛C ACV, ¼ tsp sugar and kosher salt. Thinly slice 1 Shallot and add 2 tbsp ACV, and a splash of sumac, sugar, and salt. Set aside.
Trim excess fat and rinse 2lbs chicken thighs and cut into long pieces like tenders, add 1 tbsp vinegar toss and drain. Add heaping ½ tsp each Honey Chipotle & DIY Taco seasoning. Cought chicken well. Cook in EVO over med low heat 4-5 minutes per side.
Meanwhile, Grill corn cob on gas stove top as well as corn tortillas @missionfoodsus. Crumble queso fresco. Combine ingredients and enjoy.

2 tbsp Chili Powder
1 tbsp Cumin
1 tsp Ea: Garlic Powder, Onion Powder, Oregano, Paprika, Salt
½ tsp Pepper
½ tsp Red Pepper Flakes. Dash of cayenne

Meet Vince. He is originally from New Orleans and will occasionally bring his cajun flare to our “chef’s specials!” He is a fantastic manager and has worked with BuzzBrews for 3 years. He recently moved to the Lemmon location to be the General Manager. Vince is excited to be part of the community over there.

One of my goals this year is to spend as much time as possible outside to take breaks. #AD On long workdays, ten or fifteen minutes in the garden enjoying a snack like almonds can be so restorative and exactly what I need to get through that midday slump! Almonds provide sustained energy and taste delicious. I eat a lot of almonds in any given week: I love almonds in salads and pasta, in fish and chicken dishes, and in desserts, but they’re just as delicious on their own. Plus, they’re portable so I can even keep them in my purse for on-the-go snacking! 🌹 I would end this with a cute emoji since I love emojis, but there isn’t an almond emoji.

If you are a matcha lover like me, definitely need to check out this cute little matcha tea shop @mecchamatcha in Plano! Pronounced "met-cha," Meccha is Japanese slang for "very"or "super." They are a premium matcha-centric tea shop. Their matcha is ceremonial grade, carefully handpicked and sourced directly from their tea farm in Uji, Japan. All of their Meccha ingredients are selected to ensure quality in taste and skimping on artificial flavors, colors, or additives. They have different levels of matcha: Level 1 Matcha Ice Cream, 25% matcha, Level 2 Matcha Ice Cream, 38% matcha, & Level 3 Matcha Ice Cream, 55% matcha (strongest matcha ice cream in U.S.). Being my first time there, I definitely had to get all three levels to test them out! I say for first time goer start with level 1. It’s smoothest, creamiest and very mild with not overpowering matcha flavor. The pic is level 3! It’s definitely pretty intense matcha flavor. If you don’t like that strong bitter taste like in dark chocolates or coffee you might not like level 3. You get that strong pronounced flavor yet a sweet lingering taste afterwards. My favorite was def level 3 personally. But I can definitely see how each level can be best used/enjoyed in different ways depending on other ingredients added with it for your drink or dessert. I’ll definitely be back to try more of their matcha goodies they have there! 😋

"Had to check out @heavenlykupcafe after my delicious bowl of poke since we were in the area! Been wanting to try this place out and grab some boba and one of their desserts they have here. I ordering a mango green tea with 0% sugar and mango popping boba. The drink was so refreshing even on a cold and rainy day like today. To go along with our drinks, we decided to try out their Taiyaki (fish shaped waffle) one filled with custard and other filled with Nutella! They are made to order and come pipping hot, crispy on the outside and soft on the inside with the delicious filling! Perfect combo for a light dessert/drink after poke. I’ll definitely have to come back to try their other tasty desserts and drinks they have here!"
