It’s been a rough week & it’s only Wednesday. Too many behavioral issues, end of school craziness & too much work.
Why is it that so much nonsense gets packed into the month of May? I feel like it is one of the prettiest months seasonally & yet I feel like I miss it every year. Uh.
Just a little something I fixed up while meal prepping my veggies: sprouted grain bread topped with avocado and vegan chipotle mayo, oven-roasted zucchini, spring mix, kale burger patty, saurkraut, and butternut squash noodles 😌
