For me to eat clean, I need to have flavor... to convince a child to eat all kinds of vegetables, you need to be creative with textures, flavors and aromas! In our kitchen, things are going well so far... No simple carbs night with 5 different veggies and some lean protein. The asparagus were on point and the eggplant was an easy amazing dish. Today’s lunch for the preschooler is a, go to, freezer staple in our household...Chicken sausage rolls.
These are a great one for hiding some vegetables 🙌🏻🥕🥒 the kids will love them...recipe below!!! Chicken Sausage Rolls
1 grated carrot
1 grated zucchini
500g chicken mince
1/4 cup mayonnaise
Salt and pepper if you wish
3 sheets of puff pastry
An mixed egg for brushing on top
Mix all the ingredients together and then lay mixture on puff pastry sheets. I cut the sheet in half and do two rows of the mixture on each sheet. Roll up and cut up,(I like diagonal for something different) brush with egg and sprinkle with a desired decoration (sesame seeds, bread crumbs, poppy seed) and bake on lined baking trays in your oven 180C for around 20 minutes or golden brown and cooked through. Cooking great ... with @saveurmag, @donangienyc and @italianwinesusa. This poorly lit, anticlimactic video does not do the meal ANY justice, but sometimes it’s really nice to just enjoy the food and conversation without worrying about the money shot. And this prime rib braciole was the perfect way to do that. Well, this and legitimately everything else on the menu. I actually got better photos that I can post another time, I just wanted to make a point: live in the damn moment sometimes. And to Chefs Scott and Angie - thank you for an amazing meal, you killed it 👏🏻😋🥩🐷

I’ve always loved food TV. When I was a kid I would watch The Frugal Gourmet, Yan Can Cook, and Tye Graham Kerr Show. Thank God for PBS! ⠀⠀
It’s so fun for me to see Annika learning to cook. I’m a bit of a nervous nelly with her and the stove, but I’m trying to relax. She needs to learn and I need to let her build experience.

Tuesday: 🥢Asian Chicken Bites🥢 with wholewheat noodles 🥡& greens! 🥦 😋😋😋😋
This was inspired by a vid I saw over @diy_hacks.life They used salmon bites so this would work with salmon too...this is a slightly different version so if you want to create this just hop over to my stories for all the step 🥾by steps 🥾! I’ll save to highlights a it’s a yummy one & kids both loved this! They ate loads! 👍🏼
All you need is:
• chicken breasts - cut into bite sized pieces
• 1 cup soy sauce
• 2 garlic cloves - crushed
• 1 inch ginger - finely grated • 1 tbsp sesame oil
• 2 spring onions - finely sliced
• Juice of a lemon
• Ground pepper • 1 tsp chilli flakes (optional)
Mix all the ingredients together in a bowl and add you chicken. Cover and leave to marinade for 30 mins or longer if you can
Next take the chicken pieces out and roll on sesame seeds and place onto a lined baking tray and pop into the oven at 180C for 12-15 mins or until chicken is cooked through.
Meanwhile pour the marinade into a pan and bring up to a simmer. Add 2 tbsp honey & reduce the sauce a little before adding some cooked wholewheat noodles. Stir the sauce through the noddles then top with some chopped fresh chilli and some additional slices spring onion! ~
Serve with the chicken & some green beans & tenderstem broccoli! 😋😋

Toad in the hole with beef chipolatas, peas, beans, potato waffle and ketchup. Ate some of the waffle and that was it. Bad day at the office even by our standards...

Vegan food for the whole family🧡 Sweet potato wedges, spinach pancakes with lingonberry compote.
🌱100 g of Fresh baby leaf spinach or 150 g of frozen spinach
🌱2,5 dl buckwheat flout
🌱 1 dl oats
🌱1 ts baking soda
🌱pinch of salt
🌱4,5 dl plant based milk (I used oat milk)
🌱olive oil for frying
🌱serve with lingonberry compote
Blend all the ingredients together and fry the pancakes with with olive oil. Serve with sweet potato wedges and lingonberry compote.

We have been lucky enough to have some seriously awesome au pairs along the way to help out with the children and crucially lend a hand whilst I got my business up and running. Each and every one has brought new wonders to our family and I feel so fortunate to have had an energetic wingwoman to help me wrangle with tempestuous toddlers and 10,987 unloads of the dishwasher. Happy Weekend my #coconuttykids Mamas (and Papas , and non married people and basically anyone else who’s here 😁).
Sooooo, you’re probably wondering what on earth this photo is about but I just scrolled down to the start of my account and this was my VERY FIRST post. I had no clue how to take a photo, about lighting, about food styling ... I had no clue about anything to be honest.
BUT what I did know is that by some miracle my girls were eating these greens 🥬 and when their friends came over I managed to get their friends to #eatyourgreens and their Mums would be amazed ! I literally turned this entire board of #greenveggies into a pasta sauce and any kid who tried it - would eat it!
Sooooo, that was where it all began. My friends would say ‘you need to start a blog and share your recipes’ so one day .... I did ! Well, not a blog but I started this Instagram page. All thanks to these beautiful green veggies, and my friends and my kids for eating what I prepare ... well thanks to many things. You get what I’m saying ?!
I don’t write many personal posts but I do want to say that this page brings me SO MUCH HAPPINESS and purpose and it’s all thanks to you guys for following along, sending me messages, making my recipes and generally just being there. SO THANK YOU!
Enough rambling. Are you getting ready for Halloween? Here is a weird but tasty Halloween Breakfast idea for children. Red cabbage made the egg weirdly green, sunflower seeds with raspberry made a convincing monster from a persimmon, butter glued almond slices to breadstick to make them look like real fingers and a mini pumpkin from an easy peeler was there to highlight the occasion.
