Dark Chocolate Tea Mousse made with a favourite tea from @anandini_himalaya_tea, pinewood smoked tea. You can well imagine the subtle undertones pinewood smoked tea would lend to dessert. Add dark chocolate to it and dessert assumes a new meaning!
WEEKLY FLYER BUDGET FRIENDLY MEAL!
YUMMIEST VEGETABLE SOUP!
2 tbsp olive oil
1 large onion, diced
3 cloves garlic, minced
3 medium carrots, diced
3 stalks celery, diced
2 medium potatoes, peeled and diced
2 tsp Italian seasoning
4 cups vegetable broth + 1 cup water
2-15oz can diced tomatoes
1 cup corn (I used thawed from frozen)
1-15oz can kidney beans, drained and rinsed (optional)
1 bay leaf
¼ cup parsley, chopped
1 tbsp freshly squeezed lemon juice, more to taste
1½ tsp kosher salt, more to taste
Freshly ground black pepper
Heat oil in a large stockpot or dutch oven over medium-low heat. Once hot, add onion, garlic and a teaspoon of kosher salt and cook about 8 minutes. Add carrots, celery, potatoes and cook for 5 more minutes, stirring often. Add Italian seasoning and cook for one more minute.
Add broth, water, tomatoes, corn, beans, bay leaf, and several grinds of pepper. Bring to a boil and then reduce the heat to low and simmer, covered until the vegetables are tender, about 35 minutes.
Remove from heat and stir in parsley and lemon juice. Remove bay leaf and season to taste with salt (don't be shy, I added lots of salt!) and pepper. Serve hot with crusty bread.

Good evening. Tonight’s dinner is baked wild caught Salmon with Blanched Asparagus & Creamy Sauce made with Extra Virgin Olive Oils from Spain! This silky sauce is dairy free but still has a creamy delicious flavor thanks to the EVOO’s emulsifying properties. The salmon’s Omega 3 fatty acids and the appreciated poliphenols of the EVOO make the perfect match to our health. 3 egg yolks.
Juice of one lemon.
3/4 cup Extra Virgin Olive Oils from Spain.
Salt and pepper to taste.
Bring a medium sauce pan of water to a steady simmer. Add egg yolks to a stainless steel bowl with 1/2 of the lemon juice. Place the bowl on top of the simmering pot of water and continuously beat with a whisk for 5 minutes to heat the yolks through. To prevent the egg yolks from becoming to hot and thick take the bowl on and off heat several times during the process while continuing to beat with whisk. Slowly add the Extra Virgin Olive Oils from Spain about 2 tablespoons at a time until mixture is silky and smooth. To speed up the process once the egg yolks were fully heated throughout I used an immersion blender while adding the olive oil and it worked great! Once the egg yolk and EVOO mixture is smooth and creamy whisk in the remaining lemon juice and season with salt and pepper.
