When Akiya Parks first got to #campus at the University of Florida,🐊 everything was new and exciting.🤩 Her mom and brother had driven her to campus and moved her into the dorms, she’d agreed to try a long-distance #relationship with her high school boyfriend, 💑 she was ready to start a new chapter in Gainesville. This was a #dream come true: No one in Parks’ family had ever gone to college before, and her good #grades ,✔️ volunteer work✔️ and commitment to her community✔️ had earned her a full-ride scholarship💰 — nearly everything was paid for. She got a new laptop,💻 she bonded with her roommate👯 and she crafted her schedule. But a few weeks into classes, she started feeling sick.🤢 At first, she thought college food🍲 just wasn’t sitting well, but it wasn’t the food. She was pregnant. “I went back to my dorm, crying.😭 Devastated,” Parks recalls. “I didn’t know how college worked. Do they kick out pregnant people? I just didn’t know any of the answers to my questions.” The question on everyone’s mind — especially Parks — was, would she say in school? Could you go to class and raise a #child ? Of course, what Parks didn’t know, is that nearly 4 million college students are doing this right now — that’s about a fifth of all undergraduates. #Student parents are mostly #women 👩 (about 70 percent) they are more likely to be from low-income #families and students of color. Today was such a long day. I had class from 8-11 then there was an extra credit session from 11-12. After that I went to the library for an hour and then I had training for one of my jobs from 1:30 to 3:45, so by the time I got home I was exhausted and starving 😩⠀
I wanted something filling but still healthy, and I thought stuffed peppers would be a good way to meet that criteria. To be honest with y’all though, I’ve neither had nor made stuffed peppers before, so I just had to wing it 😂😅⠀
The dEATS: ⠀
- green bell peppers⠀
- onions and garlic ⠀
- black beans, corn, tomatoes, and tofu⠀
- @daiyafoods pepper jack shreds ⠀
- white rice⠀
- cilantro and lime⠀
I sautéed some onion and garlic in vegetable oil then added crumbled tofu + a bunch of spices and the black beans, tomatoes, and corn. While that was cooking I boiled the peppers for about 3 minutes to soften them. Once all that was ready I filled the peppers, topped them with the cheese, and popped them in the oven at 350F for about 10-15 min to melt the cheese. The rice was leftover so I added some cilantro and lime juice to it. This meal was super delicious. 10/10, would recommend!! 😋

I remember when we first made the decision to attend the same college and everyone but our parents thought it was such a “bad idea” lol. Well, JOKES ON THEM! To say I’m proud that we’ve overcome this milestone is an understatement. Though I’ve know you for about 18 years, been together for almost 7, these past 4 years have taught me sooo much about you ❤️ we’ve literally been through hell and back, but WE STILL HERE! 🗣 God literally blessed me with my soulmate at such a young age and I didn’t even know. Like I remember when you were my bro 🤞🏽😭 I would go to you for advice about everything lol. From leading the choir and ushers in church back home, to motivating each other to accomplish our goals in higher learning, shows that ANYTHING is possible. You continuously inspire me to do better so I can be better, everyday! You do it even when you don’t know you are, and that’s why I love you so ❤️ Our friendship plays a huge role in our relationship and it’s truly something special to me! I appreciate it so much because you’re my best friend babe and I would never want to lose that ✨ Congratulations to you my love! MY BABY GOT A BACHELORS YA’LL!!! And Congrats to us for doing it together 💪🏽😘 I can’t wait to see what future holds for us!
