The BEST fried (hot chicken) I’ve ever had. It’s 🌶, tangy, crispy, & truly mouthwatering. If you eat this once, you’ll never look at fried chicken the same way again as you will crave this! The sides are also scrumptious, pimento Mac and cheese is my staple 🤤 #hattiebshotchicken

Here’s one of my favorites...shawarma style chicken(meaning I seasoned it with shawarma seasoning), collards that I cooked in the same pan as the chicken, deglazed with some bone broth and added a little Jacobsen sea salt and let them simmer. Everything went over mashed spuds because I’m Irish and I put that shit in my cereal. All easy stuff. I have an open mic night to go to where I’m gonna sing ootsie tootsie songs to a bunch of dopers from the northside. Collard season is among us. When Ms. Nell and her husband pulled up in the yard Uncle Andrew knew what they came for. He pulled a half way rusted hack saw from the bed of his truck and made his way to the patch. After a few moments of deliberation he marched in collecting the two he discerned were most ready. Barely visible behind his selection he walked back toward us. He asked them to give whatever they wanted to, and as they turned out of the driveway he slid the singles into his wallet. It’s hard to describe the joy I see in people’s faces when they pull into our yard to get a bushel of okra, head of cabbage, bag of salad, or arm full of squash. Watch me make the perfect #CollardGreens!! 😋 Here's the #recipe:
1/2 pound smoked turkey wings
4 cups of chicken stock
1 tablespoon seasoned salt
1 tablespoon red pepper flakes
1 large bunch of collard greens
1 tablespoon butter
1 chicken bouillon cube
1 tablespoon of black pepper
1 whole onion sliced
1 tablespoon of granulated garlic
3 tablespoons of apple cider vinegar
Wash the collard greens thoroughly.
Remove the stems that run down the center by holding the leaf in your left hand and stripping the leaf down with your right hand. The tender young leaves in the heart of the collards don’t need to be stripped.
Stack 6 to 8 leaves on top of one another, roll up and slice into 1/2 to 1-inch thick slices.
In a large pot, bring 1 quart of water, butter & 4 cups of chicken stock to a boil
Add smoked turkey wings, bouillon cube, seasoned salt, garlic powder, onion powder, black pepper onions, apple cider vinegar & red pepper flakes.
Reduce heat to medium and cook for 45 minutes.

4 lbs collard greens cleaned and cut
2 large red peppers
1 large onion diced
2 cups chicken broth/2 tbs Chk Bouillon
2 cups water
1 tsp seasoning salt
1/2 tsp ground black pepper
1 tsp minced garlic
1 large jalapeno pepper sliced
2-3 tbsp of white distilled vinegar
2-3 tbsp white sugar
Turkey Neck Bones
DIRECTIONS: Set pot on medium heat. Melt butter in pot add bouillon, sauté onions, peppers, garlic, salt, pepper and jalapeños in butter, continue stirring. Once ingredients are sautéed add 1 cup of chicken broth and sit neck bones in liquid, top with greens. Let simmer for at least 2 hours, every 30 mins stir and add sugar and vinegar as you go. Season to taste.
Jalapeño Five Cheese Mac & Cheese
1 lb elbow macaroni
1/2 cup mild cheddar
1/2 cup sharp cheddar
1/2 cup jalapeño jack
1/2 cup Gouda
1 1/2 stick butter
Cheddar cheese sauce
2 cups heavy whipping cream
Chicken stock (as needed)
Flour (as needed)
Finely chopped parsley
Boil macaroni 7-9 mins or until al dente, drain and set to the side.
In a medium-size saucepan, melt 8 TB of the butter, add enough flour to make a soft paste, add heavy cream and stir until flour is smoothed out to a roux. Combine cheese sauce, and cheeses. Season sauce with salt, pepper.
Transfer to an oiled baking dish, top with cheese. Bake 30 mins.
Add breadcrumb topping (melted butter (2tbs) pulverized Cheetos (1/3 cup) and breadcrumbs (11/2 cup) mix ingredients, top macaroni put back in oven until topping is golden brown, about 10 mins. Lightly top with parsley.
