Wew it's been a hot week! If you keep finding yourself opening the freezer on the hunt for something cool and sweet (and for the refreshing wave of icy air), then these blueberry coconut popsicles will be just the ticket! ❄️☀️❄️ They're vegan, dairy-free and gluten-free, and it will only take you about five minutes to whip them up! 🙌🏽 INGREDIENTS
1 can full-fat coconut milk
3 cups fresh blueberries
2-3 tablespoons pure maple syrup
Add coconut milk, blueberries and maple syrup to a blender or food processor. Blend until smooth, scraping down the sides of the blender as needed.
Pour this mixture into a popsicle mold.
Make sure to leave about ¼” of space at the top of the mold to allow the popsicles to expand in the freezer. Insert popsicle sticks into the mold, or follow instructions for your mold.
Freeze for 6-8 hours.
Remove from freezer. Allow to thaw for a minute or two. If needed, run popsicle mold under lukewarm water to help the popsicles loosen.
Place the popsicle mold on a flat surface and wiggle the popsicles out. Enjoy! ✨

I absolutely love this place because it allows vegetarians/vegans to enjoy Hawaiian food, which isn’t easy to come by in Hawaii. I always loved the laulau leaves the most and wouldn’t really eat any of the meat on the inside. My favorite Hawaii dish was always squid luau, minus the squid haha. I never get my full fix of Ai Love Nalo every time I come home, but when I do I go all out!
The Oh Wow Laulau is one of my 2 favorite plates at Ai Love Nalo and it’s mainly because of the Laulau. I love how they also added their own twist by pouring coconut milk all over on top, which remind me of squid luau and how it’s sweetened with coconut milk. It gets even better when you dig inside to find goodies like kalo or ulu (my favorite!). I usually opt for poi and the spicy tofu poke as my sides, but sadly I came a bit late and they ran out of poi. But if you are lucky enough to get some poi the whole plate really comes together as a perfect combo and satisfied craving for Hawaiian food!

Been a stressful few days getting back from our road trip, working, missing Tafe enrolment feeling like I had a million things to do and could not do anything. As always it was not as bad as I thought but, anxietymakes you feel like it's the end of everything. I only recently realised that I have mild anxiety and it feels good being able to identify my physical and mental well being when I am in that space. I took a mental health day, got some much needed good sleep, enrolled in Tafe and sorted out my payment plan. It feels like everything is back on track. I can return to eating properly what makes me feel good inside, makes me feel good outside. A mental note to ensure I take care of my health during this year, full time student, part time worker, full time mum and Miss Bean starts pre-primary in a week. A big year and we are going to struggle at times, bit if we take a step back, evaluate, listen to our bodies, rest when we need to, eat well then we should be good. |Ζεστή σοκολάτα με γάλα καρύδας|

Υλικά για 2 ποτηρια
• 740 ml. Γάλα καρύδας
•20 γρ. Ζάχαρη
•30 γρ. Κακάο
•1 πρέζα Αλάτι
•1 κ.γ. Βανίλια εκχύλισμα
•330 γρ. Κρέμα γάλακτος
•Έξτρα κακάο για το σερβίρισμα
•Βάζουμε ένα βαθύ κατσαρολάκι σε μέτρια φωτιά, ρίχνουμε μέσα το γάλα καρύδας, το κακάο,τη ζάχαρη, το αλάτι,τη βανίλια και ανακατεύουμε καλά με το σύρμα χειρός.
•Αφήνουμε τη σοκολάτα να βράσει και μόλις είναι έτοιμη, αποσύρουμε το κατσαρολάκι από τη φωτιά.
•Παράλληλα ρίχνουμε την κρέμα γάλακτος στον κάδο του μίξερ και τη χτυπάμε μέχρι να γίνει σαντιγί.
•Σερβίρουμε τη σοκολάτα σε ποτήρια ζεστή και προσθέτουμε τη σαντιγί από πάνω με τη βοήθεια μίας σακούλας ζαχαροπλαστικής ή με ένα κουτάλι.
•Πασπαλίζουμε με κακάο και απολαμβάνουμε!
