Tried a new recipe out on my kids. I found it in the book Dinner in 5 by Vicky Ushakova. I paired it with zucchini noodles and a delicious salad. They both loved it and ate every bite!! Recipe below:
2 6oz chicken breasts
1 large egg beaten
1/4 cup parmesan cheese
2 oz pork rinds
1/2 cup marinara sauce *Pulse the pork rinds and parmesan cheese until it resembles bread crumbs
*Coat chicken in egg and low carb breading
*Bake breaded chicken in 375 degree F. for 30min
*Add marinara the last 5 min of cooking
2.5 g carbs 13.4 g fat 50.4 g protein
Mine were a little thick so I doubled the batch and increased the cooking time
Dinner today. 🤤 Trying something new these days to see how it goes. So far my tummy did not totally like the mct oil I put in my coffee this afternoon, may have been too much so tomorrow I'll try half of what I added today. 😋 I really outdid myself with this ovenroasted cauliflower tossed in nutritional yeast. 😎 Too bad there is close to no colors on this plate. 😂 And I made me some homemade liquid gold (aka. ghee, thanks for the help/tips @bigeasy.wholeliving 😉)

I’m not posting so much as Keto is now more of a lifestyle and I’m not 100% perfect. I felt terrible when I cheated on holiday, joints ached, headaches, low mood so that was enough to remind me to eat well.

I’m a little softer this week. My abs are gone (for now), my curves a little curvier...my booty a little bootyer (it’s a word, promise) .
As I watch this squat vid I see the changes in my body from the choices I made while in NYC. It’s no big deal. Seriously! .
I am not eating restrictively to return to my tight, lean bod 🙅🏻♀️
I’m not overexercising 🙆🏻♀️
I’m not drinking skinny teas or taking laxatives 🤦🏻♀️
I AM engaging in a healthy level of exercise🙋🏻♀️I AM eating clean keto and whole foods based. I AM reminding myself of how far I’ve come rather than telling myself negative shit to ‘punish’ myself for simply living life and going with the flow .
I think we often believe if we don’t act perfectly all the time then we’re going to lose our progress. I also think having a healthy relationship with fitness has nothing to do with being perfect and EVERYTHING to do with building trust in ourselves that we can always return to a self loving space when we face change in our routines .

I feel like I just made THE best keto dessert I’ve ever tasted and this will definitely be thanksgiving worthy. This recipe for pound cake is by @fittoservegroup. I altered it just a tad. Added lemon extract and zest to it and it legitimately tastes like Starbucks lemon loaf 🙌🏻 Topped with a caramel glaze and it is to die for good 😍
It’s days like today that really are a mind game. I was wearing workout pants and a shirt and I thought to myself “your legs and ass have not gotten any smaller” and I had to walk away from the mirror. When you lose a large amount of weight it takes awhile for your mind to catch up. For me, I only really see it when I take a picture of myself and look at it. Looking at this photo, I KNOW I’ve lost 115 lbs and it’s very obvious!! But looking in the mirror, I’m not so sure. Weird, right? Even wearing this T-shirt. I bought this shirt at a thrift store because I was in desperate need of clothes that fit. So I just headed to the men’s section and picked a shirt in the largest size. 3xl. You’d think looking at myself in it would be enough to convince my mind that yes, of course I look different. But many days it isn’t enough. I still have 60 pounds to go and I don’t know if I’ll have worked past the body dysmorphia yet, but I sure hope so.
