Got my @rancho_gordo bean box today and realized that I still had a bunch of beans to cook from last quarter’s box. We’ve been eating lots of soup lately (it finally feels like fall!) and this was a nice switch up. The recipe calls for alubia blanca beans, but I used azufredos and omg, they were fantastic. Once I cooked the beans, this came together in about 20 minutes. Only regret is that I didn’t have bread to sop up the broth. 10/10 will definitely make again.
Taglioni Carnezzeria - garlic, olive oil, parsley, clams and ginger. HOT DAMN, the only time I had ginger with pasta 🍝🍝🍝 during this trip and this was a Top 5 pasta entry for sure 🇮🇹🇮🇹🇮🇹 CARB LIFE CONTINUES TO BE STRONG 💪💪💪

Clam chowder, New England style from live clams.
I’m not a clam chowder person, so this was my first time cooking live animals... i didn’t expect them all to come to life after sitting unmoving for so long. Kinda creepy, one more minute in the steam and it was over.
My secret was two things, one I took the clam meat out until everything was cooked, that kept the meat tender.
Second, I strained out the potatoes and chunks of crispy salt pork in one bowl and cream/clam juice/starch/seasoning into another bowl.
Then I blended the cream, a little at a time, until it was emulsified, making a smooth stock that I mixed the meat, potatoes back into, then served in my homemade sourdough bread bowls. 🍞
It turned out great and 5 pounds of clams and 3 points of potatoes were eaten. .
