Here’s a little recap of the Cinco de Mayo festivities. We had an Essential Oil-Infused Tequila Tasting. I infused a good anejo tequila with 5 different essential oils and people had to guess. Overall, majority got them or were close. So much fun! #essentialoilcocktails
Happy Cinco de Mayo friends!! I’m all for any excuse to celebrate with food, especially when it includes Mexican fare!
This recipe is great for breakfast, lunch, or dinner!
Step 1: mix a (drained and rinsed) can of black beans with some cumin, chili powder, cayenne and garlic powder in a small saucepan with 1/2 cup water (pro-tip: this is my basic taco seasoning recipe, so if you have taco seasoning, feel free to use it here). Cook until beans are heated through, then mash until desired consistency (I like to keep a few beans whole). Step 2: spread beans on a small tortilla and top with shredded cheese. Bake until bubbly and bottom of tortilla is crisp. Remove from oven.
Step 3: top tortilla with a fried egg, a scoop of sour cream or Greek yogurt, some salsa or pico de Gallo (recipe in previous post), sliced avocado, cucumber and cilantro. Hot sauce is recommended.
Step 4: eat with a knife and fork🍴and enjoy!
