Eggs for Sunday breakfast😺 Was feeling hungry, so I went with 🥚🥚🥚scrambled eggs, three slices of @jonesdairyfarm Canadian bacon, and leftover peppers, onions, & cauliflower rice from last night’s dinner. (I ♥️ leftovers.)

Vegan Red Bean & Coconut Curry
1 red onion, diced
2 cloves garlic, minced
2 large tomatoes, diced
1 can Red Kidney Beans, drained and rinsed
1 can Coconut Milk
1 TBS Curry Powder
1/2 tsp Nutmeg
1/2 tsp Cinnamon
Optional: 2 medium Potatoes, diced
Fry off onion and garlic for 2-3 mins.
Add in tomatoes and fry for another 2-3 mins.
Add in all other ingredients (including potatoes if usimg) Bring to the boil and then reduce to a simmer.
Simmer for 20 mins.
Serve with cauliflower rice and fresh parsley.

This fast easy LOW CARB ‘fake fried rice’ is amazing!
Takes not even 5 minutes!!!
I put into it 4 rasher bacon, 1/4 cauliflower, bit of cabbage, 1/2 onion, 1 garlic clove, but ginger, handful peas and2 eggs.
Quick stirfry, add eggs 1 Min from the end and sprinkle soy or chilli whatever u want.
Make it vegan by taking away the egg and bacon!

This Thai Curry is very low carb, still tastes great & 1 portion only has 400 kcal 😋👌🏼 Wanna try? Check out the recipe below ⏬ It is for 8 portions - we had half of it yesterday & put the rest in the freezer (meal preeeeep 😁)
ingredients: 2 onions, 3 peppers, 400g champignons, 2 zucchini, 1 can of chickpeas, 500ml coconut milk, 500ml buttermilk, palm sugar, 1 lime, 50g cilantro, 50g fresh ginger, 4 spring onions, (yellow curry paste), cauliflower, olive oil, butter, salt & pepper
* cut all the veggies in whatever size you like
* sauté the onions in olive iol for a few minutes
* add the pepper & zucchini afterwards & sauté until firm to bite
* stir the curry paste into the liquid coconut milk, before pouring it over the veggies (see the little video above in 2nd position)
* add the champignons, the decanted chickpeas & butter milk
(Why use butter milk instead of more coconut milk? - It is way lighter than coconut milk. This way the whole dish tastes lighter & we save many calories 😏)
* cut the ginger into very thin sticks & add them to the sauce
* to bring the flavour of the sauce to perfection add 1 tsp. of palm sugar & the juice of half a lemon
* season with salt & pepper as you please
* let the sauce cook until the cauliflower rice is ready as well, which you will start preparing now 🙃
* cut the cauliflower into little pieces, which will fit into a blender
* shred everything in a blender until it has the size of little grains of rice
* heat it up in a pan with 2 tbsp. of butter
* I wouln't use to many spices, because you do not taste them in the end after all, you will just need to mix the cauliflower rice with the sauce ☺
When the rice is done, your sauce will most likely be done as well 😃 Arrange everything on your plates & decorate with cilantro & the spring onions! ENJOY!!! 😍
One last comment to those of you who do not like cauliflower. I myself really hate cauliflower on its on, but trust me when I say that you will not taste it, when mixed with your thai curry sauce 😎

As dodgy as this looks this is what most of my sundays look like now. Cauliflower rice prepping!
Hubby took us out to dinner. Told him last night that today would be my carb day and I wanted pasta. For breakfast I had #bulletproofcoffee and lunch lean ground beef and #cauliflowerrice.
For dinner had salad, chicken and shrimp carbonara with 2 bread sticks and a mixed berry sparkling water. I was full right away, couldn't finish my dinner. I enjoyed this sparkling water very much though 😋
Need any easy healthy dinner idea? Salmon sprinkled with salt and pepper. Radishes cut in half with drizzle of olive oil and salt. Torn kale sprinkled around. Mix 1.5T Dijon mustard with 1/3c maple syrup and brush on salmon. Broil on high x 5-7 minutes. BOOM! Easy weeknight dinner. Serve over cauliflower rice. gotta admit, this rings SO true for me! hahahaa. i grew up in Kansas City ... on a very unhealthy diet. my childhood consisted of mcdonalds, kfc, pizza hut, taco bell and hamburger helper. By the time I was 18, and moved to LA, i was suddenly introduced to so many new/amazing and healthier dietary options ... ie: what’s an avocado and where has it been my whole life?! 😱😂
now .. 17ish years after moving to LA, my diet has had many ups and downs, but has pretty much always moved forward. (aside from a few hiccups south. 🙊 ie: my last relationship made it *really* hard for me to eat healthy. he pretty much rotated pizza and pad thai on the daily and refused to try most “hippy shit” 😂🙈) ... but, alas, i am single again and not distracted by the junk food that was constantly all over my house 😝
i actually just started following the keto diet (aka hello, cauliflower rice!) and i feel aaaahmazing 😍 my health/weight has had so many ups and downs during my life. i was my heaviest when i was 11ish (and i gotta say >> life was *hard* for a 220lb pre-teen in the early 90’s🙈) ... but ima let you in on a little secret. i’ve made it a personal goal to share my own health journey with you all. not quite sure how to go about it yet (not sure if my bizzy/werkshop page is the appropriate platform) but i want everyone else out there who might be struggling to know they’re not alone 🙏🏼 and this isn’t just about weight loss. its about living a healthy life. it’s about making the right choices and listening to your body. i decided to make this change because of an overwhelming feeling of fatigue/stress and fear of diabetes. at the end of the day, all we can strive for is to be the best possible version of ourselves ... to love ourselves ... to accept ourselves ... and i truly believe it starts from the inside 🙂

Dinner tonight was a great one! We Love stuffed peppers so finding a lower carb way to make it was a must. Still working it some kinks to make it more keto/macro friendly...but next time should be great. We used cauliflower rice instead of rice and I couldn't even could tell the difference! Yay! 😀 Unfortunately we only had lean 93/7 ground beef which next time will be a no go, but we wanted to use it up since we had it. Also haven't been able to find low sugar tomato sauce, not even sure if that exists but I will continue to look 👀 for it! All in all, one pepper was about 10 net carbs including the tomato's and sauce, but I didn't eat the pepper because the insides are many favorite part 😏 so it was about 7 net carbs for me 👍
cauliflower rice skillet topped with a 6 minute egg 🍳 cauliflower rice is a super easy way to add extra nutrients and fiber to any skillet recipe — I buy it frozen and heat it in my skillet with oil for 3-4 minutes. for this skillet I added an egg, charred tomatoes, and arugula and sprinkled everything but the bagel seasoning

Am I the only one who had way too much Easter candy these past few days? 🍫🙋🏻♀️ I’m trying to cut back on all the sugar and add in as many veggies as possible. One easy way I’m sneaking more in is with this Broccoli Cauliflower Rice Chicken Casserole! Lots of broccoli, lots of cauliflower rice and, for flavor, lots of cheese 😊😬

Parmesan Chicken & Garlic Cauli Rice Skillet. This was absolutely delicious and one of the best low carb skillets I've ever made! I don't have a recipe to post just yet, I'm still working on the ingredient measurements since I made some adjustments to the original. I'll get it posted soon, if anyone is interested 👌
