Back with another recipe for you for Wellness Wednesday - Cauliflower Base Pizza! They taste even better than they look!
All you have to do is grind the cauliflower, run it in the microwave for a minute and squeeze out the water. Then mix it with 1 egg, some cheese and better and spread it to make your base. Use topping of your choice. It’s really that simple. I devoured it!
It's so easy to get stuck in the cycle of thinking that our productivity is what makes us valuable. Do more--> be more. I know I do this--I feel so much better about myself and my worth when I have checked off a ton of items from my daily to-do list at the end of each day. But is this thinking accurate? Does it actually serve me? I would argue that it's neither. We are each inherently valuable--no matter our productivity. We know the basic truths of equality are that no matter our occupation, race, social status, daily accomplishments, we each have an equally valuable life. Due to our Creator making us that way. And while we may believe that our value doesn't change, our level of contribution does unarguably make us feel more valuable because we can see what we are adding to the world in a visible way. This varies greatly from person to person, but how can we detach from that backwards mindset?
The danger I see with that mentality is that when we base our worth on our productivity, what happens when we have an unproductive day, or week, or YEAR? More than likely, negative self-talk enters in, and we kick ourselves down until we feel like 💩. And when we feel like that, can we access feelings of hope, inherent value, or see the contribution we can make? Probably not. Our thinking gets cloudy. It's hard to come out of the fog. It's when we recognize that NO MATTER WHAT we have value, that we can truly live up to our full potential. When we can exercise self-compassion, and forgiveness for ourselves, we are going to go back to the place of hope, optimism, contribution, and commitment much quicker. So instead of letting the world tell you that you need to do more to be more, instead, turn that around and BE MORE, to DO MORE.
Just some thoughts...
Also, tried my hand at these @minimalistbaker Shawarma Cauli Steaks just before grilling season starts... and I must say, they were a HIT! The chutney was 👌🏼👌🏼👌🏼. And I am already dreaming up all sorts of ways to play with this idea! Stay tuned for some super fun summer recipes!!
Work lunches 🥗 🍽 🔹roasted pumpkin, chickpeas, sweet potato and cauliflower with fennel seeds and smoked paprika
🔹mixed with kale, baby spinach and fresh parsley for lunch salads
🔹toasted nuts and seeds with garlic, salt and chili - I make these in bulk, leave them in the pantry and sprinkle them on anything boring 🥦🍠🥗 #wherethealmondemojiat

i came back from the gym ravenously hungry but alas i ate the last of my meal prep last night 😿 so i threw together the fastest meal possible: frozen cauliflower gnocchi from trader joe’s + 1/2 bag of frozen kale + a container of sliced mushrooms + tomato sauce. took probably 12 minutes, tasted amazing, and good for le health 💯 tonight i’m baking a big old chocolate cake for my dad’s birthday and there’s gonna be glutenful flour, white sugar, vegetable oil, etc because guess what, food is also for celebrating 🎈 have a wonderful thursday everyone!
Y’all the hype is REAL 🍝
If you don’t have a @traderjoes near you, then find one, bc the cauliflower gnocchi is legit 👌🏼
The check-out man told me the secret to cooking them: boil for 3 minutes then cook in a hot skillet with a little bit of olive oil until slightly browned. However my fave advice he gave was to not pay attention to the serving size and to eat them all 😹
Topped with vegan pesto & red pepper flakes
*make sure to use a non-stick skillet when cooking, these guys get a lil sticky after boiling
or a pizza, or fried rice... and then @traderjoes made all our dreams come true! 🙌🏼
PS - my cauli gnocchi & turkey bolognese recipe is coming to the blog on Monday! It’s a game changer!
PPS - if you don’t know what inspired this quote, add Notting Hill to your Netflix watch list this weekend and thank me later! 💛
