Clearly my drizzle didn’t really work out how I planned... but this dinner was amazzzzing. I was so happy to see that romaine was back in the grocery stores so I picked some up for this tofu burrito bowl. 🌱🌯
• Cilantro lime brown rice over romaine
• Tofu - marinated in olive oil, hot sauce (franks of course), cumin, chili powder and paprika
• Roasted peppers and onions in that same marinade
• Black beans
• Topped off with a homemade cilantro walnut lime pesto 🤤
Pesto: a big handful of cilantro, drizzle of olive oil, a few walnuts, a sprinkle of nutritional yeast, garlic, and some water to thin it out. All pulsed in the food processor. So easy and delicious

Today my #keto#omad was a bowl of loaded soup from Qdoba. Extra meat and 2x the hot sauce. It was a little bit higher in carbs and probably has flour in it but sometimes it's nice to not have to cook and clean. I did have a very attractive date though 😍😍!!! 1142 calories 68% fat, 7% carbs and 25% protein.

This week, I have delicious burrito bowl!!! So filling and so yummyyy 😋, Swipe right to see how I store it, i use an aluminium foil to contain the cold food when I don't have compartments in my Tupperware.
Ingredients (4 servings):
400g of chicken breast (chopped to bite size pieces)
1 yellow bell pepper
1 red bell pepper
1 1/2 red onion
2 cups quinoa
1 can of mixed beans
Low fat cheese
2 cups of shredded lettuce
35g of Fajita seasoning ( I use 1 packet of the Schwartz brand fajita seasoning)
Boil 4 cups of water and add 2 cups of quinoa to the water with a sprinkle of salt. Put a lid on it and simmer until all the water is absorbed. Set aside to cool.
Heat up a big pan or wok and pot a few tbsps of olive oil. Once the oil gets hot, add in the chicken and cook for a few minutes. Sprinkle half of the fajita seasoning to the chicken and mix it well. Wait until the chicken is almost fully cooked and add in 2 bell peppers and 1 onion ( chopped to long and thin slices). Add in the rest of the fajita seasoning and mix it around. Add in 2 chopped tomatoes and mix. Let it cook until all the liquid evaporates. The meat should have a thick fajita gravy (not runny). Let it cool.
For the homemade salsa, chop 1 tomato, 1/2 cucumber and 1 red onion to small cubes. Mix it with salt, pepper, cumin, garlic powder and a squeeze of lemon.
You can add other toppings like beans, cheese, shredded lettuce and avocado.
Finally, enjoy !! 😛

Originally I had to run a mile. But with no treadmills available I resorted to rowing.
Both regretting and thanking my decision because I hit a PB! Finally nailed that sub 7min mile row! In 6min37!
Legs were shot after that but I still had the remainder of the metcon to do 😂

A good session that left me hungry for more...and food 😂 🍜 Today's Post Training Meal 🌱 Burrito Bowl with Protein Bread slices and Brocolli
- mix together, diced vegetables (carrot, paprika, mushroom), black and kidney beans with salsa and spicy chicken spices
- add some steamed brocolli
- add microwave rice on the side and blast for 3mins
- side with tomato and protein bread
Enjoy warm 😋👌 That meal filled me up nicely before I headed off again for my weekly grocery hauls 🙃 after getting that done I needed to sit down for a bit and get some work done before my evening courses. CHICKEN BURRITO BOWLS! @mealprepster 😍😋
2 teaspoons olive oil
2 pounds boneless, skinless chicken thighs
1 yellow onion, diced
2 garlic cloves, minced
1 tablespoon tomato paste
1 teaspoon oregano
1 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 teaspoon cayenne pepper
1 (14.5-ounce) can whole tomatoes
1/2 cup chicken broth
1/2 teaspoon kosher salt
White or Brown rice (let’s put a real amt since meal prep - how much?)
Optional: Your favorite burrito toppings such as beans, cheese, peppers, cilantro or salsa
Heat oil in a pressure cooker on the “Saute” setting a heavy-bottomed pot (preferably a Dutch oven) over medium-high heat. Sear the chicken for 6 minutes total, 3 minutes per side. Transfer chicken to a holding plate.
Cook the onions until they are soft and translucent, 2 to 3 minutes. Stir in the garlic, tomato paste, oregano, cumin, chili powder and cayenne pepper and cook for another 30 seconds. Stir in the tomatoes, broth and salt. Raise the heat to high to Bring the mixture to a boil then set to Warm mode, then. Lower to a simmer, then return the chicken to the pot and make sure it’s completely submerged in the braising liquid. Cover and Seal the pressure cooker lid and cook on the Poultry setting, or 15 minutes on High pressure over medium-low heat until the chicken shreds easily when pulled at with a fork, 45 minutes to an hour.
Transfer the chicken thighs to a large bowl.
Transfer the braising liquid to a blender and blend until smooth. Return the sauce to the pot and Cook over medium-high heat the braising liquid on the Saute setting until reduced by about one-third, 10 to 15 minutes. Transfer the braising liquid to a blender and blend until smooth.
Meanwhile, shred the chicken by pulling it apart with two forks. Once the sauce has reduced, mix about 1/3 cup into the chicken.
Build a burrito bowl with your favorite rice as the base and add your favorite burrito toppings and store in the fridge for up to four day
