Dinner tonight was tri tip, roasted broccoli, and asparagus. I was very tempted to eat pizza after a long day. I wanted easy. This was easy, but it took slightly more effort. It’s worth it to me to take a little time so I can feel better. I really don’t feel great when I choose the easy, cooked by someone else, food option. I get bloated and gassy. I gain weight. When I eat well, I notice. I eat well 80-90% of the time though and that’s good enough for me. I need to be able to let loose and have fun from time to time. Today’s lunch and dinner- Red Robin burger without a bun. 2 small patties, Swiss cheese, some red onion and lettuce, 2 pieces bacon, and 2 oz salsa and about 1 T of sour cream. Huge helping of broccoli with extra butter.
Didn’t have dinner per se, was going to IF till morning, but ended up with 3 strawberries at a church fellowship and 2 T of whipped cream before we left.
Breakfast- 4.5 pieces of bacon. If it wasn’t for bacon I could not eat Keto. Love bacon.
Although weekly weigh in is tomorrow, I HAVE to share that I FINALLY HIT ONEDERLAND TODAY!!! I haven’t been here in 3 years, this is so exciting! 💪🏼💪🏼💪🏼

Packed my travel goodies for a weekend away at my parent’s house since my sister and kids are visiting! Dumped all my necessities on the floor to capture the goodies I needed for this weekend. I haven’t really veered away from the staples but definitely added a few new ones!
▫️Been really loving the @drunkelephant marula oil mixed in my foundation to give me a nice glow. It’s been an everyday necessity for my base.
▫️Loving the broccoli drops from @buffher. A light facial oil but very hydrating and nourishing for my dry skin. Love that the broccoli oil is anti-aging. Yes, please!
LUNCH - warm chorizo, chicken & broccoli ‘salad’. This was literally just a ‘throw together’ lunch because I really felt like chicken and steamed broccoli. I cooked the chorizo first, then sat it on some paper towel to soak up the excess fat (I didn’t cook it in oil or anything). Then, I cooked the chicken in the same pan. All while the broccoli was cooking away in a seperate saucepan. Tossed together in a bowl, seasoned with salt & pepper and drizzled with lemon juice. . 🍃After having been away all last week, I was really looking forward to being at home again for our Friday night platter. (I am such a creature of habit!!)😂😂 .
On tonight's platter there's fresh capsicum, 🥕carrot, rocket🍃 and choggia beets as well as a spicy sweet potato 🍠dip and some baked red🌶🌶 jalapenos. I also wanted to experiment with stuffing some of our orange rocoto cilllies... verdict: still very hot despite 2x parboiling first!!🔥🔥 And from the pantry there's olives (the last of last seasons), dried Roma tomatoes🍅🍅 and dehydrated pears.🍐🍐🍐 (Note to self: need to dry more pears next season... they are super tasty and there's never enough!!)🍐

SUNDAY MEAL PREP COMPLETE 🙌 stuck with my usual staples for this week, with my fav go-to crockpot chicken and carrots 🥕 To make this, fill the bottom of a crockpot with carrots, place a whole chicken on top, and cook on high for 4-5 hours or low for 7-8 hours. Once fully cooked, use forks to shred the chicken meat while it’s still warm. I usually store half in the fridge for the week and freeze the rest 👍
Now I’m off to dinner with the fam for my sister’s birthday, hope you all have a great start to the week!
