My first attempt at making a frittata and it wasn’t half bad! I’m not a big fan of breakfast for dinner, but I was in the mood for some eggs and bacon (not pictured because I may have eaten it before the frittata was done 😜).
I made lazy omelettes for supper. There's eggs, red onion, red pepper, tex mex cheese and bacon.
I dont like red peppers, but I've found a way I will eat them. Never be afraid to try something you don't like more than once and made differently, you might be surprised how much you enjoy it!
