La mia stagione preferita, senza dubbio. Adoro i colori, i sapori e il profumo dell'autunno.
Per festeggiare, ci siamo fatti questo piattone di pasta e ci siamo messi a guardare un film. Ovviamente, la ricetta è stata improvvisata sul momento 😄 abbiamo fatto un soffritto di cipolla e le zucchine di @belladentro_org, poi abbiamo aggiunto dei dadini di patata americana fatta al forno e per ultimo un cucchiaio di yogurt di soia e un po' di aglio in polvere. E voilà il perfetto #comfortfood autunnale.
Il tutto è stato pronto mentre su un altro fornello c'era la pentola a pressione con una zuppa di zucca per domani 🎃

Longest. Sunday. EVER. I am so frazzled by today that I didn’t do my usual step-by-step dinner pics! 😢 After the day we had, which involved a broken dryer and THREE different dryers before figuring out that while our original dryer is indeed broken, the dryer outlet is fried, too. So, we now have 2 working dryers (we returned the 2nd and got the third 🙄 it’s confusing and stupid and ridiculous...and we’ll likely have a dryer for sale in the next week or so...but I digress) and nowhere to plug them in until our electrician comes this week. I got to hang laundry outside to dry today, like some kind of wild animal; it’s been an experience...There was a lot of heavy lifting and tempers sizzling...😏 In the midst of all this, I still needed to feed my family, so I decided to give them some #comfortfood of #chicken#smotheredgravy#gravy#browngravy#sweetcorn and #mashedpotatoes ...I don’t know about y’all, but mashed potatoes can fix just about anything as far as I’m concerned. We’ve been looking for new ways to up our fat intake— I think I hit the jackpot with this 30 minute meal! Sauté zucchini (or asparagus or green beans) remove from pan. Brown chicken thighs (rubbed with salt, pepper, garlic and Italian seasoning) Once cooked through, remove from pan. Add more olive oil to the pan on low heat, sauté fresh, diced garlic until fragrant. Add about 1 cup (we all know I don’t typically measure) of heavy whipping cream. Stir. Add salt. Add butter. Add red chili flakes. Stir. TASTE. Add Parmesan cheese and mozzarella. Stir. TASTE. Add more seasoning as needed. Once flavor is superb, stir in green veggie of choice and serve immediately with chicken. 😍🤤 #brittsbestplate#ketocookingwithlove PS- I’m sure my new 5th graders are gonna loveeee my garlic breath mañana lollll ❤️
