So this happened yesterday! Slow. Cooker. Pork. Ribs. 👀 This was something that my wife & I had been planning for a week or so now, since we both couldn’t celebrate Valentine’s Day on Vday, so we decided to celebrate it on Saturday. A little back story behind the prep for this meal. I discovered it while scrolling through my daily feed and saw this @buzzfeedtasty post about slow cooker honey soy ribs, it looked so good and didn’t have a ton of steps so I figured let’s do it! I had all the products for it.
I started the prep for the ribs bright and early yesterday, seasoning with salt, pepper, chili powder and paprika. Then adding some local organic honey, soy & garlic to the slow cooker, I split the ribs in half and let the cooker do the rest of the work. Originally it said 8 hours on low, but I made an executive decision and altered my recipe a little by coating the ribs every couple hours in the sauce and I upped the heat from low to high about 5 hours into it to try and get the texture that I was going for. That decision was the right one that we did cause by the end the ribs had a nice coating from the spices and couple rounds of glaze from the sauce, and half the ribs fell off the bone before I could even give them a chop. The other half were cooked so well that they were meaty and full of flavor. Paired with a blueberry sour ale I picked up from @trilliumbrewing last weekend (there will be a separate beer post to follow regarding this), and some home style beans and baked sweet potato fries.
