Weekend breakfast inspiration ... kale, mushroom, bacon & eggs. In a pan fry the bacon (rashers (chopped) or lardons), set aside. In the same pan sauté mushrooms (garlic optional), set aside. Then the kale for a couple mins. Add it all to an oven tray, with some halved cherry tomatoes (optional), make wells and crack eggs in there. I’ve always walked by Princi but never been in, was free one morning and decided to jump in for breakfast, and since then has become one of my favourite places for breakfast.
My favourite part is the seating areas around the sides next to the water fountains along the walls, where there’s stone bricks as well. Just gives a relaxed chilled vibe with the soothing music playing.
The food was really good.
Eggs were springy and fluffy, the yolk was oozing.
The cherry tomato salsa had a strong sweet tomato flavour, lot of depth to it, and warm bits of cherry tomatoes throughout adding a bit of extra sweet flavour when bitten through. It went really well with the eggs.
The sourdough was thin and crispy, with a little drizzle of oil for that extra flavour.
Pricey but a really nice breakfast.

•4 OF MY 5 A DAY IN HERE 🌱• OK having just spotted a snow shower outside, I was in the mood for something spicy and warming for breakfast 🔥. I’ve made a super quick shakshuka-style dish here in which I’ve managed to pack 1/2 leek, 1/2 pepper and 2 large fresh tomatoes. I think that’s #winning for breakfast, right? And this is not arduous cooking, it’s literally sautéing some veg, cracking in some eggs and popping a lid on. I must admit I quite like a bit of feta crumbled over but didn’t have any, so have improvised and used some of my crunchy nutritional yeast crumb from last week that I had leftover and it was 👌.
Who here actually counts how many portions of fruit and veg you eat in a day? The recommendation is 5 a day but the evidence actually says 10 a day is beneficial for health but it was felt this was an unachievable target that would put people off. Soooo... why don’t you have a think about how many a day you actually do? And if you’re not sure what counts as 1 portion, here are some examples:
🌟1 medium piece of fruit eg banana/apple/pear
🌟1 heaped tablespoon dried fruit
🌟3 heaped tablespoons of vegetables
🌟2 double handfuls raw spinach
🌟3 heaped tablespoons beans or pulses

I love making shakshuka at home, but I usually make it with a tomato base: so I was keen to try this green version from @tahinabar - the broccolli, avocado and zuchinni, with perfectly cooked eggs and a massive side salad was delicious. Feeling inspired to make green shakshuka from now on!
Another day, another brunch post🤤 Home Sweet Home (Northern Quarter one) is a great place to go for food but also if you’re craving tea and cake. They have a large variety of freshly baked, and absolutely amazing tasting cakes 🙌🏽 We ordered brunch: Eggs Cali which was Salmon, Avocado, Poached Egg and Hollandaise Sauce on Sourdough with Onions, Peppers and Chipotle Crema. We also ordered the Baked Eggs which was Smoky Tomato Sauce with Chipotle, Peppers, Onions and Eggs, topped with Feta, crispy chickpeas and Halloumi, severed with Sourdough😍 Somehow we had space for dessert and ordered a (huge) slice of the Terry’s Chocolate Orange cake which was ABSOLUTELY DIVINE🧡
Ready in just 20 minutes, our Italian baked eggs make a super speedy mid-week meal. Scatter with crumbled feta and basil to serve!

SO morish and scrumptious, a little bit special but incredibly simple. Mop it all up with some crusty rye bread and pair it with a strong coffee and it’s my perfect way to start the day.
