Roasted Cranberry and Orange Crostini
The perfect little appetizer to please everyone.
-3 Tbsp Olive-Me & Co.'s Blood Orange Extra Virgin Olive Oil
'12 ounce bag fresh cranberries
-1 orange, zested and then squeezed for juice (yield: about ½ cup)
-¼ cup Olive-Me & Co.'s White Cranberry Pear Balsamic Vinegar -¼ cup sugar
-Whipped cream cheese
-1 baguette, sliced into ½" thick slices
Preheat the oven to 275 degrees.
Zest the orange and refrigerate until ready to use. Squeeze the juice into a cup.
In a medium size mixing bowl, add the juice and the White Cranberry Pear Balsamic Vinegar, and sugar. Add in the cranberries, and toss to combine. Spread the cranberries in an even layer in the pan. Roast in the oven for 1 hour.
When done, cool slightly (if you plan to refrigerate, cool to room temp and transfer to a covered air tight container.)
While the cranberries are roasting, slice the baquette. Brush each side lightly with the Blood Orange Extra Virgin Olive Oil. When the cranberries are done, turn up the heat to 350 degrees. Arrange the slices on a sheet in an even layer and toast each side. This will take about 5 minutes per side.
When ready to assemble, spread the whipped cream cheese on top of the crostini, put a spoonful of the roasted cranberries on top, and finish with a sprinkling of orange zest.

Steamed Wontons 🥟
For The Stuffing
1 tbsp oil
1 tsp finely chopped garlic (lehsun)
1 cup finely chopped cabbage
1/4 cup finely chopped spring onions whites
1/2 cup grated carrot
3/4 cup bean sprouts
3/4 cup boiled noodles
1 tbsp finely chopped spring onion greens
1 tsp soy sauce
1 tsp chilli sauce
salt to taste
25 wonton wrappers
1/4 tsp oil for greasing
3 tbsp plain flour (maida) dissolved in 1/4 cup
1 tbsp oil
2 tsp chopped garlic (lehsun)
1/2 tsp chopped green chillies
2 tbsp chopped spring onion greens
salt to taste
green garlic (lehsun) sauce
chilli garlic (lehsun) sauce
For the stuffing
Heat the oil in a deep non-stick pan on a high flame till it smokes, add the garlic, cabbage, spring onion whites, carrots, bean sprouts and sauté on a high flame for 2 to 3 minutes.
Add the noodles, spring onion greens, soy sauce, chilli sauce and salt, mix well and cook on a medium flame for 30 seconds. Keep aside.
How to proceed
Place a wonton wrapper on a clean, flat surface.
Place a little stuffing in the centre and apply a little flour paste along the edges.
Fold over one part to make a semi-circle.
Bring the ends together and press well.
Repeat with the remaining wrappers and stuffing to make 24 more wontons.
Arrange half the wontons on a greased sieve and steam for 8 minutes.
Repeat step 6 to cook the remaining wontons in one more batch.
For the tempering, heat the oil in a small broad non-stick pan on a high flame, add the garlic, green chillies, spring onion greens and salt and sauté on a high flame for a few seconds.
Pour the tempering over the steamed wontons.
Serve hot with green garlic sauce and chilli garlic sauce. —————————
Cheese and Spring Onion Sandwich 😍
12 toasted bread slices
butter for spreading
To Be Mixed Into A Cheese and Spring Onion Stuffing
1/2 cup cheese spread
1/2 cup finely chopped spring onions (whites and greens)
1/2 cup mayonnaise
1/4 cup finely chopped capsicum (red , yellow and green)
1/4 cup milk
1 1/2 tsp dry red chilli flakes (paprika)
1 tsp grated garlic (lehsun)
salt and freshly ground black pepper (kalimirch) to taste
Divide the cheese and spring onion stuffing into 6 equal portions and keep aside.
Apply a little butter on each toasted bread slice and keep aside.
Place a toasted bread slice on a clean, dry surface with the buttered side facing upwards.
Spread a portion of the cheese and spring onion stuffing evenly over it and sandwich it using another toasted bread slice with the buttered side facing downwards.
Repeat steps 3 and 4 to make 5 more sandwiches.
Serve immediately with tomato ketchup. —————————————
