3 Farro - einkorn, emmer and spelt made up these loaves. Equal portions of each. Milled just before making the dough and baked the next day before going to work with an overnight proof. 70% hydration with 2% salt and 20% leaven.
Somebody couldn’t wait to have a piece before I was able to take a picture. 😧😃
Spelt was from Maine and the Einkorn and Emmer from central Massachusetts. .
Was a pretty sticky dough that was playable but would tear easily. Almost like working with einkorn only.
Crumb came nice. No big holes but lots of little ones. Nice flavor with hints of molasses. 🤤
This homemade, gluten free bread is simple and delicious. Plus, it is nutrient-dense and easy to digest. It is perfect topped with the new @rxbar vanilla almond butter and berries.❤️🍞recipe below⬇️ Ingredients:
- 5 eggs
- 1/3 cup filtered water
- 1/4 cup avocado oil
- 2tbsp apple cider vinegar
- 2/3 cup sprouted garbanzo bean flour
- 2/3 cup cassava flour
- 2/3 cup ground amaranth*(for paleo omit amaranth and use 1 cup cassava and 1 cup garbanzo)*
- 1 tsp baking soda
- 1/4 tsp sea salt
- preheat oven to 350*
- mix wet ingredients in a bowl
- in a mixing bowl, combine the dry ingredients
- add wet ingredients to dry ingredients, and mix well to form a dough
- transfer the dough to a parchment-paper-lined loaf pan
- bake for 1 hour (60 minutes)
- remove from the oven and cool before slicing
- store covered in a refrigerator

Wheat has been at the heart of humankind's diet for thousands of years. It is, in fact, the foundation of civilization: it cultivates easily, stores for years in kernel form, releasing its nutritional bounty when the seed is ground and prepared into fresh breads or porridges. This is how grains have been consumed over the millennia: stored in whole kernel form and milled fresh, full of life and nutrients.
There is nothing wrong with wheat, but the way we grow it and process it in the modern society (pesticides, gmo etc)
This wheat is actually an ancient type, that is grown organically and consciously. Is full of nutrients and even people with wheat sensitivity can eat it without any issues. 🌾🌾🌾🌾...

We have strawberries starting to ripen, we just got our bees and received some of our favorite grains. Time to make some fun breads. We should be able to start using our honey to sweeten our at the end of August! Next bread day is May 31st. Last day before we hit the Tuesday market June 19th!
We will have a sweet and tangy quick bread with Strawberries and rhubarb. This will have a lite strawberry glaze in top. We should have enough strawberries right out of our strawberry patch. -We will also have our delicious orange zest, craisin and white chocolate raised bread. If you have not had this bread it is a fabulously sweet and flavorful bread. -With the grains we bought we will be having a Kamut/Farro blend flour with dried apricots/currants and toasted almonds. This will be sweetened with molasses and pure maple syrup. We will also have cinnamon swirl our best seller and the 50/50 blend. We will bake these in the small and regular size. The regular size is 6$/loaf and the small is 4$/loaf. Cinnamon swirl and 50/50 is 5$-regular and 3$ small. Comment below to pre-order. If I'm being honest, my postpartum diet has been worse than my pregnant diet. Either only eating a single meal consisting of a protein bar or a bagel or eating fast food or a costco frozen something-or-other. This last month and a half has been about surviving, keeping a newborn alive, pumping her food round the clock and topping out at a whopping four hours a day of sleep, split.
I made the effort today. It took HOURS. Between cooking the quinoa, buying the groceries and prepping it all between feedings and diaper changes but it was so worth it. And I made a SHIT TON so survival is a bit more healthful these next couple days

This morning’s dough building included a small batch of a 30% #ancientgrains dough (freshly milled spelt, einkorn, and emmer). This video is after a 30’ autolyse. I’m mixing the salt and levain into the dough by pinching it in, but notice that I’m not tearing the dough in the process- in this case, I don’t want to undo the work the autolyse did in building gluten by tearing the developed gluten all to shreds. Because of the flour mix, the dough doesn’t tighten up so much that I need to let it rest in the middle of this initial mix, but it does come together quite nicely by the end of the video.
