Have you ever taken on a meal that you just love, but has intimidated you for so long? With the help of @nelson5280, I did just that today!
Our #pho making adventure started with a late night trip to the grocery store the night before we started the simmering, cleaning, chopping, measuring experience.
Armed with a list of ingredients, our scavenger hunt was on!
Neck bones? What the heck are even neck bones for? Shin bones? “Beef Stew Bones”? And flank steak. Hello, Pho.
Along with a few special spices, deliciously fresh toppings, and traditional rice noodles, we were well on our way to a Pho dinner!
We first boiled the three-meat combo to “clean” it, then rinsed it, then reboiled with all of the above ingredients. For 8 HOURS!
Prep the toppings #jalopenos#freshbasil#beansprouts#scallions#limes and even our homemade #pickledonions made the short list of must-haves for finishing off our Pho.
We made a happy and, “can you believe we did this?!”, #cheers before we tasted our all-day-creation. Oh my! #delicious#homemade#thenewhealthy#datenights in are more memorable.

First bowl of pho in Vietnam. We were brought here by Dom's uncle, and it was definitely one of those hidden gems you wouldn't be able to find without the help of a local. Probably one of the best I've ever had. 🤤

This was the pho that ended the beginning of this work: Nha Trang One. A plain pho tai served with glee on the steps of the civil courts in Manhattan. I like my broth served with a joyous "Happy new year, pretty girl!" from my waiter.
Losing your voice as a mom is like someone taking away one of the best tools in your momming arsenal. I can barely bark out orders let alone have a decent conversation, and I’ve been in my pajamas or old high school sweatshirt all day... but at least it’s the weekend! ~~~ Breakfast ~~~ 1/2 grapefruit, 1/2 and avocado with Tajin sprinkled on top, two sunny side up eggs, and some apple slices. And eventually a banana. ~~~ Lunch ~~~ A soup made for champions, or my take on chicken pho with zucchini noodles, peppers, ginger, carrots, bone broth, fish sauce, cilantro, and many more friends slowly simmered while I binge watched “Good Girls” on Netflix. ~~~ Dinner ~~~ We have lots of odds and ends left in the fridge, plus a couple of fun toppings so we did a Cobb salad bar with choose your own toppings. ~ Here’s to hoping I wake up with a voice tomorrow *sparkling water* cheers 🥂 #whole30#januarywhole30#paleo#realfood#whole30family#whole30mom#whatiatetoday#pho#saladbar
