#DanielFast Day 12! I redeemed dinner tonight with Mexican Stuffed Bell Peppers, Cilantro/Lime Rice and Avocado/Vegan Cream Cheese Sauce. .
1 Can Pinto Beans
1 Can Whole Corn
1 Can Fire Roasted Tomatoes
Tablespoon Minced Garlic
1 Pack Organic Taco Seasoning
Mix all that and stuff in peppers. I put mine in the slow cooker low 8 hours. . Oh and I threw a few tater tots in too hahaha
Sauce was made from half an avocado, 3 tablespoons nut based cream cheese, juice from half a lemon, chopped cilantro, garlic salt and a pinch of sea salt

Have you ever had a meal that left you uncomfortably sad and distraught. As if you'd been tricked. As if you had been played a damn fool. That's how I felt after my meal at Mexican Amigos. I can tell you with conviction that this place is not worth your time.⠀⠀⠀⠀⠀
There was probably 4 other diners there - bad sign, but it was a Tuesday evening and they're located in a random corner of Richmond Hill. The interior was unbelievably tacky. It was decorated like a gift shop selling random trinkets you would see as you leave Mexico. Personally I loved it!! But I just love tacky things.
We ordered some chips and guac to start. For entrees I had the chorizo Chimichanga and my amigos had the enchiladas. Guac was good, because we were hungry. The entrees took a ridiculous amount of time to come out. Considering there was 4 other people there we were shocked, but we told ourselves it means they're making everything fresh.
Boy were we wrong. Rice was underseasoned and completely bland. Also they used basmati rice, completely off for Mexican cuisine. Beans were weird. Yes weird, clumpy and bland. The chorizo was fake. It tasted like regular sausage, not at all spicy. There was no fiery heat in the sauce that was haphazardly thrown onto the plate. The whole thing tasted like it was from a freeze, overly defrosted and then flash fried. All that sadness for $18 too.
Apologies for the lengthy post, but I refuse to let my snackiety amigos go through this disappointment.
Tuesday’s will always be the day for tacos 🌮🌮🌮 Rain 🌨 or shine☀️ My question is... is King Taco really the king of tacos? Let me know what you think‼️

PORTOBELLO FAJITA BOWLS | I love meat but honestly mushrooms 🍄 with the right spice can be just as good! These are a hit with the family. Shay loves spicy 🌶 food, and it makes it so much more fun eating together 💕 these bowls are great for a dinner party but also in your lunch box - I had leftovers for lunch 🥗 and it was super delicious!
2 portobello mushrooms, sliced
4 garlic cloves, crushed
2 tsp of smoked paprika
2 tbsp of olive oil
1 avocado 🥑
1/2 red chilli
100g Brown rice
1 red pepper, sliced
1 yellow pepper, sliced
30g of greens 🥬
Cook the rice as per pack instruction.
Mix the oil, garlic, smoked paprika together with a good grind of salt in a large bowl.
Heat a griddle pan to a high heat and griddle for 10 mins.
Dice the mango and mix with half the lime and chilli.
Slide the avocado and serve together with salt and fresh lime.
