We’ve been looking for new ways to up our fat intake— I think I hit the jackpot with this 30 minute meal! Sauté zucchini (or asparagus or green beans) remove from pan. Brown chicken thighs (rubbed with salt, pepper, garlic and Italian seasoning) Once cooked through, remove from pan. Add more olive oil to the pan on low heat, sauté fresh, diced garlic until fragrant. Add about 1 cup (we all know I don’t typically measure) of heavy whipping cream. Stir. Add salt. Add butter. Add red chili flakes. Stir. TASTE. Add Parmesan cheese and mozzarella. Stir. TASTE. Add more seasoning as needed. Radishes are literally life changing! 😍🙌🏼 Boil red radishes until soft. Sauté diced radishes with bacon and diced bell peppers. Season to taste with garlic, onion, cayenne, coriander, salt and pepper. Throw on some cheddar cheese- let it melt. And then top with a fried egg, avocado, salsa, sour cream and cilantro! Easy, breezy pork carnitas! 😋🐷🥑🌮 #brittsbestplate#cookingwithlove RECIPE: 2 pork tenderloins- dried and heavily seasoned with garlic powder, onion powder, cumin, cayenne, coriander powder, black pepper and a bit of salt (you can always add more later). Turn crockpot on high and add 2 tablespoons of olive oil. Throw in the pork and cover with one can of roasted diced tomatoes with green chilies, 1 jar of green tomatillo salsa and 1/2 cup of water. Let simmer for 4-6 hours. Shred, taste, add more seasoning to taste, stir and then enjoy! Soooo easy & soooo tasty!
