Eating at my desk after a walk around the pond during my lunch break (taking full advantage of any sunny, warm days to get outside while I still can. I know the days are numbered!) @realfoodwithjessica stuffed pepper soup (paleo and Whole30 compliant!) and a 1/2 sandwich made on organic sourdough bread from @wholefoodschi, @applegate roasted turkey breast slices, @andrewandeverett Muenster cheese and a little @veggiesmadeeasy green leaf lettuce. I was craving a sandwich like nothing else and a combo of soup and 1/2 sandwich hit the spot!

Humid warmup in Chicago after a weekend of rain calls for a mason jar salad for lunch. From top to bottom: @organicgirl baby spring mix, @thenewprimal classic marinaded chicken breast tenders, chopped broccoli and cauliflower, @lovebeets organic roasted beets, and @tessemaes everything bagel ranch dressing. My go-to salad combo (and the one I always make from a salad bar) and it’s 🔥 today!

Rainy mood AF this morning. Thankful for meal prep and the foresight to leave a batch of pancakes for Friday (usually scarfed down much earlier in the week). Pumpkin Flax @kodiakcakes (now back in stores for the season! Be like me and stock up now for the whole year until next season!), vanilla @siggisdairy mixed with pumpkin pie spice, and a heavy drizzle of honey cinnamon peanut butter from @rxbar.
This is EVERYTHING! Roasted Japanese sweet potatoes dipped in @tessemaes everything bagel ranch dressing. Um, sign me up! 🙋🏻♀️ Only available online, but don’t let that stop you, buy a 4(or more)-pack!
Grabbed the new harvest salad from @farmersfridge for lunch today. Mixed greens, honeycrisp apples, roasted sweet potatoes, couscous with dried cranberries and toasted pecans, and goat cheese, dressed with their housemade balsamic vinaigrette. (And clearly couldn’t resist the dark chocolate trail mix again either!) Best eaten outside with the work crew. 🥗+☀️=❤️

Digging into this beaut for breakfast this morning. Cinnamon raisin @rachelsovernightoats (made with @califiafarms toasted coconut almondmilk), vanilla & cinnamon @siggisdairy, @rxbar honey cinnamon peanut butter, topped off with a banana. How much cinnamon is too much cinnamon? Asking for a friend. 🤷🏻♀️
Made the time for a hot breakfast this morning! Scrambled eggs with @primalkitchenfoods ketchup and a @traderjoes toasted British muffin with @miyokos_kitchen vegan cream cheese, smashed avocado, @mightyvine tomatoes and everything but the bagel seasoning. My late-morning self will thank me for this later, for sure!

Errands before work meant breakfast to-go today. Thankfully I prepped overnight oats this weekend! Pumpkin spice @rachelsovernightoats (with @califiafarms toasted coconut almondmilk), pumpkin spice @siggisdairy and @rxbar’s new maple almond butter. Best combo ever!
My favorite version of @itstaylermarie’s baked oatmeal yet! Cinnamon apple baked oatmeal — it’s the very definition of fall in a bowl! So good with a dollop of vanilla @siggisdairy and a drizzle of local honey.
Instant Pot Chicken Cacciatore from @tastythin coming in HOT! Other than starting off on the wrong foot (rotten red pepper from @traderjoes means only 1 green pepper and 0 red peppers made it into the pot) this was SO freaking easy, SO freaking fast to make, and SO freaking delicious! I served it over roasted spaghetti squash noodles and packed it up for lunches this week. Add this to your meal prep next weekend and you won’t be sorry! 🍝

Lunch out yesterday. @waynephillips wanted to check out the new @mcdonalds downtown (that replaced the rock ‘n roll one), and I snagged a harvest bowl to-go from @sweetgreen. Probably not totally on the up-and-up (bringing my own lunch to another restaurant), but it worked for us yesterday!
The power is out in the office so I can’t warm up my lasagna 😩😩😩 (those are real tears folks), so salad course to start!

And that’s a wrap on Birthday 2018. No cake this year (by choice) instead I’ll celebrate with this honey butter cinnamon roll from @beatrixchicago. Sidenote: some of those steps came from hitting up a second @beatrixchicago location because the first one didn’t have any of these left and it was the only thing I wanted to celebrate my birthday! Yep, it’s THAT good!

After spending my birthday wandering from one end of the city to the other (30k steps according to @fitbit). I checked out @wsmchicago and picked up a Beet Streets sandwich from @tempestamarket to take home for lunch. Marinated golden beets, Marcona almond butter (I didn’t even know this was a thing, but I’m glad I do now!), apple, sprouts, pickled red onion on homemade multigrain bread. So freaking good, the flavors meld so seamlessly! Plus, the guys couldn’t have been nicer! They gifted me a chocolate chip cookie for my birthday❤️

Working on meal prep for the week and this little babe is on the menu. Craving lasagna for a while and then I saw my friend @jodee_lynn make it recently. That sealed it! Used my mother’s lasagna recipe, but made it with better ingredients (sorry, Mom! 😳). I guess there’s enough here to share with my husband. 🙄
Giving me life this morning after the gym (leg day, oooffff!) a toasted @rudisorganic English muffin, topped with @miyokos_kitchen vegan cream cheese, avocado and a @mightyvine tomato sprinkled with @traderjoes everything but the bagel seasoning. (No worries, this was after my protein shake made with @vitalproteins vanilla & coconut water collagen whey shaken with @harmlessharvest coconut water - gotta get those gains!).

Office snack challenge day 5: Seriously pulled out the big guns today! @siggisdairy vanilla & cinnamon yogurt and a slice of @fitmittenkitchen’s paleo banana chocolate chip skillet cake (that I’d baked and frozen into individual slices before I started my new job). Both topped with @rxbar honey cinnamon peanut butter. What did I learn from this all week? I can stay away from the junk I wouldn’t normally eat (that I truly don’t want to eat), but I need to be prepared. I need to be just as strategic about snackprepping as I am about mealprepping!
Office snack challenge day 4: sliced banana topped with @rxbar vanilla almond butter and mini chocolate chips (yes, on my real @crateandbarrel plate I brought from home!). Full disclosure I did have a slice of carrot cake in our morning staff meeting that I didn’t plan on having, but they brought it for my birthday! And it was good. Really good and worth it. Thankfully, this plate of goods saved me in the later afternoon when faced with the large tray of leftover cookies in the break room.
“I don’t have enough time.” Chalk it up to one of the lies I tell myself on a really regular basis. But I’m been working (thinking about working?) on mindset changes for a while (shout-out to @realfoodwholelife and the Feel Good Effect podcast), and today as I was coming in from my morning walk, checking the clock, showering, etc, I was really craving a warm breakfast. I could feel it in my bones, I’d never wanted anything as much as I wanted to cook myself a fresh breakfast. And that first, spilt second thought was, I don’t have enough time (that’s the whole reason I mealprep, make overnight oats, eat yogurt and granola, etc). But then I heard a louder voice (that sounded uncannily like @elisejoy): You have enough time. No doubt it was in Elise’s voice because I have heard her say it (in her podcast, in her Instastories). A lot. It’s a cornerstone part of her @gettoworkbook philosophy and how she gets things done. But I have never felt the connection to my life so keenly as I did in that moment. Because honestly, I had plenty of time. I’d still get to work early and probably have enough time to still walk a lap around the pond. But if I had listened to what I told first myself, and believed it, I wouldn’t have made the time to whip together this hot babe. Scrambled eggs (with @primalkitchenfoods ketchup - no sugar, no sweetener, no dates and it tastes like “real” ketchup! Get it!), toasted @rudisorganic English muffin, and a sliced @mightyvine tomato sprinkled with @traderjoes everything but the bagel seasoning. Fed my hunger and nourished my soul!

Office snack challenge day 3: @hillshiresnacking Genoa salame with white cheddar cheese and toasted rounds. Such a treat! I don’t buy these that often (this one was leftover from our Michigan road trip last month) so it was just special enough to keep me away from the break room brownies and cookies in the afternoon!
